    Not sure about healthy, but here's a pretty easy recipe http://www.nigella.com/recipes/view/egg-yolk-sponge-cake--2448

    You could also make mayonnaise or use them as a binding agent for meatballs or burgers, or an omelette.

    Egg yolks also make a good hair masque as well...apparently.

    Yep...still at it, working out how to retire early.:D....... Going to have to rethink that scenario as have been screwed over by the company. A work in progress.

    I use them for lemon curd

    Also add 1 to a normal omelette recipe or quiche filling for a bit of indulgence, make mayonnaise, tartare sauce, hollandaise sauce...

    I have made this.It's really nice.

    Gold cake:

    65g sugar (3/4 cup)
    85g butter (3oz)
    3 eggs yolks
    125ml milk (1/2 cup)
    210g SR flour (1 1/2 cups)
    lemon essence

    Cream butter and sugar.Add well beaten egg yolks,then milk,essence and flour.Bake at 170-180c for 35 minutes.

    use them in binding HM meatballs, meatloaf or burgers. You can add one to mashed potato & make duchesse potatoes which freeze well.

    They freeze well, best individually so its easier to use them.

    Carbonara sauce: 1 egg yolk per person, small amount of chopped cooked bacon, grated parmesan (or similar) cheese, mix together and stir into cooked drained pasta to create smooth sauce to coat the pasta.
