    Cheese straws are always good for egg yolks.

    can I just pass along a tip for keeping egg yolks? to stop them developing a 'skin' my nan used to cover them in water. They kept for a few days like that, and she then used to incorporate them into any cakes or used them to make scrambled eggs along with a freshly cracked egg and some milk.
    I do the same now if I am only using egg whites.
    PS - scrambled eggs are much more luxurious if you add an egg yolk or two.
    my fave way of using them though is to make 'duchesse potatoes'. add a yolk or two to mashed potatoes and pipe (or pile) mounds of the mix onto a baking tray, brush with either an egg wash (using another yolk and a little milk) or melted butter and place in a hot oven - when they are golden brown they are crispy and delicious!

    Store them tightly covered and they should be ok for a few days.

    I wanted to make this last time I had some but hadn't covered them and they'd gone funny :(

    Quick question about egg yolks, sorry if this has been covered elsewhere. I'm making some GF pancakes and the recipe only needs egg whites, not the whole eggs. Do any of you super-clever people have any ideas as to what to do with the yolks? I don't want to waste them. I'm not very good at baking, but am happy to give a simple recipe a go :)

    Any help very much appreciated. Thank you :)

    There should be SOMETHING there that you have the bits for/could have a go at/gives you inspiration for.

    If all else fails I usually put an egg yolk in my pastry, You could always make pastry and freeze it for another time?

    When I make meringues this is what I do with the yolks:

    spaghetti
    clove of garlic
    3 egg yolks
    large tub of single cream (or full cream milk will do if you're on a budget)
    packet of value streaky bacon
    mushrooms
    grated cheese (usually cheddar but parmesan if you have it)


    Put the pasta on to cook. Chop then dry fry the bacon until it's crispy. Add in the mushrooms and stir until cooked. In a separate bowl, beat the egg yolks and cream together and season with salt, garlic and lots of black pepper, mix in grated cheese.

    When the spaghetti is almost ready, drain and add it to the bacon and mushroom mix. Pour on the egg/cream/cheese mix and stir over a low heat for a few minutes until the egg mix is cooked. Serve immediately.
