what can i do with left over egg yolks?!?

Hi there
I'm attempting to make a pavlova & have found myself with 2 egg yolks knocking around, the only thing I can think to do with them is make mayo does anyone have any other suggestions? If I don't use them how long will they keep in the fridge (have out them in a bowl covered with cling film)

Egg custard? or make sweet shortcrust pastry which will freeze cooked or uncooked-that's what I usually do.0

Before Mum passed away I found the local market sold beautiful "Double" yolk eggs and I thought of the goodness she was getting from them so I used them to make all the usual things normally done with an ordinary egg.
They are cheaper than the eggs sold in the supermarket so good value.
But they sell out so quickly and it's an effort to get there for me(mobility is poor)so I just buy the normal eggs now for myself.

Scrambled egg (yolk) or if you're doing any pastry soon, egg wash for a lovely golden colour. Or use as a binder in anything asking for a whole egg, eg meat loaf?0

Add them in to an omlette or scrambled eggs it will make the dish richer, or beat them and freeze in a small container or ice cube tray if you won't be able to use them straight away. As long as you beat them first they are fine when defrosted
Or poached egg yolks, just gently lower into simmering water whole on a spoon and cook for a few mins, serve with a salad of baby spinach, Rocket and crispy bacon with the poached egg yolk on the top, LUSH.1 Sealed Pot Challenge # 1480

Well, when I was trying to help Mum I thought of the nourisment they were giving and the scrambled and poached eggs were lovely.
