A recipe I make with left over egg yolks.
Although, I make these in bulk, then have a load of egg white I have to waste.

    Raisin (Cranberry) Rockies.

    • 8oz Butter (NOT Margarine) Cubed
    • 2 Egg Yolks
    • 10oz Plain Flour
    • 2oz Caster Sugar
    • 4oz Raisins (OR Dried Cranberries)

Place butter in a bowl together with sugar and beat until light & fluffy.
Add egg yolks, flour and raisins to butter mixture and mix well together.
Put heaped teaspoons of mixture onto a baking sheet.
    Bake for 10 to 12 minutes at 400°F / 200°C / Gas 6.
Leave on tray for 2 minutes before removing to cooling rack.
