what can i do with left over egg yolks?!?

    Hi folks,
    I have made my meringues and now have six egg yolks left, what can I do with these?
    It's a shame to waste, Thanks.:D

    Place one egg yolk in each ice cube cavity of a clean ice cube tray. Add a pinch of salt to each yolk (if you plan to eventually use them in savoury recipes) or a pinch of sugar (if you will use them in sweet recipes). Freeze overnight until solid, then transfer to an airtight freezer bag.


    To use, thaw in refrigerator and then mix well. They will keep in the freezer for up to three months.

    Thanks, but what do I then use them for? My mind has drawn a blank as to what recipies use just yolks. Thanks

    Ice cream, custard, mayonaise are the traditional suggestions. Quiche if you have some whole eggs, ditto lemon tart which uses more yolks than whole eggs. Sweet pastry?

    Wish I'd thought of mayo , just threw 6 out last wk after making pavlova as couldn't think of anything off hand.
    Yep...still at it, working out how to retire early.:D....... Going to have to rethink that scenario as have been screwed over by the company. A work in progress.

    Hi lushplush,

    Spaghetti carbonara is what I usually make with egg yolks leftover from making meringues.

    I've added your thread to our existing one on using up yolks to keep the ideas together.

  • Add anuver egg, bit of milk, whisk up. Put pan on stove, knob of butter. Scramble.

    Add parsley, pepper to taste. Goes well on toast. Can add mushrooms, salmon and bacon if required. Sausages are sometimes added.
