what can i do with left over egg yolks?!?

  • Ooh lemon curd now why didn' I think of that I have a bowl full of lemons on my bench !!! Creme brulee is irrisistable that would be my diet down the tube as I'd never resist haha xx

    I have been asked to make 400 meringues for someone - they are paying for the ingredients but I am going to be left with a heck of a lot of yolks (about 50) that I would hate to waste - I shall use a doz or so to make icecream, can I make custard and freeze and defrost it t eat as custard?

    Ohhh I feel your pain! I've just finished a wedding cake and what with the icing I got left with about 30 yolks in total.

    I made a large batch of lemon curd, froze some and found a couple of lemon cake recipes (the Pret one is nice) that use an extra yolk. I'll get through them eventually :)

    Usually throw them in a big batch of scrambled eggs, though you could make mayo.

    Hi shirleytch,

    I use them to make spaghetti carbonara (no exact quantities as I tend to cook by eye):

    spaghetti
    clove of garlic
    3 egg yolks
    large tub of single cream (or full cream milk will do if you're on a budget)
    packet of value streaky bacon
    mushrooms
    grated cheese (parmesan if you have it)


    Put the pasta on to cook. Chop then dry fry the bacon until it's crispy. Add in the mushrooms and stir until cooked. In a separate bowl, beat the egg yolks and cream together and season with salt, garlic and lots of black pepper, mix in grated cheese.

    When the spaghetti is almost ready, drain and add it to the bacon and mushroom mix. Pour on the egg/cream/cheese mix and stir over a low heat for a few minutes until the egg mix is cooked. Serve immediately.

  • I usually have the opposite problem as I add an extra couple of yolks to pancake mix and have the whites left over! I freeze them and make something with them later a la Nigella.

    So, you could make a rich pancake batter with yours. I have cherry jam and cream cheese on mine, but not many people agree with me!! My son will only eat them plain - :cool:
