i have just made the most fantastic but fattening pavlova and am left with 4 yolks.

all the recipes i know using egg yolks involve adding cream, oil or butter by the bucketful. as lovely as this sounds i really need to get back to the calorie watching.

    any ideas please?

Mix with a little milk and dip bread into it and fry in some olive oil. Either put a tiny bit of sugar on top (&/or cinnamon) or serve with ketchup depending if you prefer sweet or savoury tastes. Nice for supper or breakfast. Did this myself last week as I made a pavlova too. Otherwise freeze the egg yolks until you can think of something better to do with them.

vixtress - I often make a very light lemon mousse for dessert which involves 3 egg whites. I then use the yolks the next day for a custard base (with semi-skimmed milk, not cream!), which either goes simply as custard, or is used for ice cream making. It's not too bad that way......... :-)

I'll add your thread to the older one we have on egg yolks to keep suggestions together.

    Hi MUMOF4,

I usually use leftover egg yolks to make carbonara for tea. There's an earlier thread with lots of ideas that should help so I've added your post to it to keep the replies together.
