    6 meals each (ie 12 portions in total)? or 3 meals for 2 of you? Sorry am having problems getting head round portions etc. Cos I think 6 meals (total) is bloody good with 500g meat!
  • Hi all,
    am currently in process of making up a VAT of bolognese sauce, is bubbling away in a 24cm le creuset (about 5l worth I reckon) reducing.
    OH is out so will be able to happily portion it up to freeze. I used 1kg mince, 3 onions, 2 carrots, 2 sticks of celery(blitzed in food processor so very small and not obviously in the sauce IYKWIM?) and 4 tins plum toms. (oh and some mushrooms and peppers & a large splash red wine :))

    That's the pan I use ;) I use 500g steak mince, 2 tins tomamtoes, 3 large onions, and whatever vegetables I have in (grated carrot, frozen sweetcorn, celery, pumpkin, peppers, courgette, etc). I bulk it out with red lentils (no need to soak - just add them) and make 500g mince strectch to 12 hungry people portions :D

    I'll add this to the existing thread on portion sizes, which has information on mince, too ;)

    ok I got 3 bags of BIG portions of sauce-3 ladles (but heaped rather than level) which will easily do 2 each, and 3 portions of pasta with sauce (75-100g with 1 heaped ladle of sauce) for freezer.
    I had 75 g pasta with 1 ladle of sauce, was VERY tasty and filling and the monster cat really enjoyed licking the plate (he is on a diet too and usually steals food out of saucepans on hob-which he didnt today-hence plate licking, I KNOW its rubbish psychology but it shut him up for a bit:rotfl:
    so in total 10 greedy person portions from 1kg mince. I must be REALLY rubbish:eek:
  • OK, after failing so miserably to really stretch the bolognese sauce, am trying harder with my next mince dish-Chilli :D
    Again-have used 1kg mince, carrots celery and onion (blitzed in food processor-almost same volume raw as the mince) LOTS of schwartz HOT chilli powder (anyone have a cheaper alternative?) 3 tins of toms, big squeeze tom puree, half a tins worth of water. Punnet mushrooms, 3 peppers, 3 tins of beans (kidney, black eyed and aduki-all tinned in water only-WHY are the value kidney beans tinned with sugar and salt? even when I rinse them I can still taste the sugary saltiness :mad:)
    Casserole dish was overflowing! I had to remove some of the liquid to allow it to reduce, in process of adding it back again.
    No lentils (not enough space :rotfl:)
    So..... Hoping for at least 12-14 portions-but will take bets on how many I actually get!!
    Maybe next time I should use 500g mince and then add lentils etc....:cool:

    My OH has terrible portion control - he just has no idea. He has massive dinner plates (like oval serving platters) that he feels has to fill with food. When I stay at his place and he cooks - I physically cannot eat the portions he doles out:eek: And he wonders why he is getting fat.

    When he comes to stay with me - he gets a normal portion on a normal sized plate which he eats without complaint. Anyone would think that he lived in a zoo because of the way in which he shovels food in - he blames it on his Irish upbringing (his parents and two sisters are shovellers too:rolleyes: ).

    There's no curing him I am afraid.

    OIII!!! We aren't all shovellers from Ireland y'know:p ;)
    My OH is english and he is WAY worse than me when it comes to shovelling (and portion sizes etc etc etc) :rotfl::rotfl:
  • A small Chinese Rice bowl is about the same volume as one of those little white cups you get tea or coffee in restaurants in. I think it might be 200ml for those who measure these things.

    One of these of dry rice, once washed, soaked and steamed, makes plenty for 4 hungry people, as it does with pasta. The small 'old lady' size pack of lean mince makes easily enough bolognese for 4, especially with 1 tin tomatoes and a cupful of assorted veggies chucked in. For noodles, the easiest way is to get the ones sold in little paper tied bundles - two bundles will serve 4 even if the packet says it's only enough for 1 person (again, assuming that you have something else to eat with it)

    We use 1 chicken breast between 3, bulking out with the starches and veggies. The supermarket size 'small chicken' leaves us happily stuffed and two smallish potatoes cut into 4 is enough for each of us.

    We manage with a serving of meat/fish being roughly half the size of my palm (but my hands, for a girl, are like shovels) and anything fatty being half that again.

    By the way, isn't there supposed to be a spoonful of cumin and paprika in chilli? That might give it a bit more oomph, and maybe a splodge of french mustard would round out the flavour and give a bit more heat?

    Mr LW would be a shoveller, too, if I let him. We had a bit of a conversation the other night about him eating so much (he's putting on a bit of weight, and the Dr has told him to lose a stone); I have a very small appetite, and he tends to just finish whatever is there.

    We've now decided that if I make something like shepherds pie, we'll put a little more mash on than I've been doing, and an extra carrot in with the soya mince, and make it do 2 days instead of just one.
    If your dog thinks you're the best, don't seek a second opinion.;)

    The chilli powder has cumin in it already, I do often add a little bit extra but couldn't find it in the cupboard today :rolleyes: (I really need to organise my spice cupboard but my kitchen cupboard space is WAY too cramped so they are all shoved in together and often involves complete emptying to find what I need)

    I do add some DARK chocolate right near the end now as well-scrummy :j
