Chicken Stock how long does it keep?

I did roast chicken yesterday and will boil the carcass for soup today. I was wondering how long it will keep in the fridge and/or freezer?
Tonight we have the leftover chicken and rice and tomorrow is lamb burgers before the mince goes off. So I won't be using it till about Thursday.

Thursday will be fine. But if you do need to keep it longer it freezes well and if you reduce it well it hardly takes up any room.0

Iv'e kept stock in the fridge for a week before using it, probably shouldn't have
but it smelled & tasted fine & we survived
it'll keep indefinitely in the freezer, I had some frozen in ice cube trays for over 2 years & it was fine0 -
I would put it in the fridge to solidify - the 'stock' go into a sort of jelly and the fat rises to the surface so you can skim it off easily (no greasy stock then, which also means, no greasy soup!
)
I would keep it in the fridge probably only a max of 3 days - that's my personal limit. But, as you've made your stock today, I would put it in the fridge overnight, then, in the morning, skim off the fat and bag up the jellied stock and freeze. Once thawed and reheated, the chicken stock will be as liquid as when you first cooked it up.
I have kept chicken stock in my freezer for 3mths before now and it's still been ok. Just make sure you freeze it in useable portions and not in one great bit lump~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Queenie...I've been caught out before sticking mince, chops, chicken breast etc in the freezer without seperating them firstFluttering about an inch off the ground, I may fly properly one day and soar in the clouds!

You can keep jellied stock indefinitely in the fridge, provided you boil it up for at least 10 mins every 3 days. It needs to be 10 mins at a rolling boil though.0

At least a week, maybe two. Give it a sniff before you use it, it should smell of whatever you put in it, if it smells of anything else chuck it;) Bring to the boil before adding to a recipe.0
