    If it smells ok to you then I think that it should be ok as long as you boil it hard for 2 or 3 minutes.

    I'd chuck it. Whilst I am all for common sense when it comes to food and use by dates etc, there are some things you just don't mess with. Chicken kept for too long is one thing, cooked pork ditto, and cooked rice a third.

    I make yummy chicken stock (in my lovely Kuhn Rikon pressure cooker) and I put it in the fridge - having cooled it quickly in cold water) It always forms a good layer of fat on the top which I imagine keeps it fresh for longer, but how long would you think it would be safe to use it (if it wasn't touched at all, so the fat layer never breached) ? I keep forgetting to freeze it.....

    I usually only keep it up to 4 days max in the fridge. I'm not sure if the fat layer helps as I always take it off as soon as it is solid. I have used year old stuff from the freezer and lived to tell the tale!

    I keep forgetting to freeze mine as well & I've used it after more than a week :o in the coldest part of the fridge (with fat removed) & lived to tell the tale

    I think this is a situation where common sense should prevail, I'll smell it first & if that's ok I'll have a tiny taste, & if that's ok too I go ahead & use it

    any doubts though & out it would go :)

    You can tell when it's off... it stinks... I lost a batch last week, as the person who was supposed to strain it and put it in the fridge neglected to do so, and two days later it was revolting. In the fridge it seems to last a week quite happily.

    I have kept it in the fridge for up to five days because I have forgotten to freeze it and it's been fine. There's an earlier thread with more opinions that may help so I've added your thread to it to keep the replies together.
