    i done it yesterday and left it on cooker (covered) it it too late to do anything with it

    boil it up again (a good rolling boil for about 5 mins), cool it and then put in the fridge or freezer. In the days before fridges etc people used to keep stock good by simply boiling it up every day.
  • Agreeed, i often leave it out because of fridge space. Good rolling boil will sort it. Or make your soup now...

    Thank you, i think i have lost it now as went to bed without doing anything about it
    so cross with myself, been a busy few days and usually i make soup the day i do the stock, going to have to go out for some chicken legs or similer as Joel keeps on about a chicken soup

    before fridges stock and soups would be left out for the week!!
    boil it up, taste it and if it it tastes ok it should be fine! i never have enough room in my fridge so soup is often left out on the hob (not all week though!)

    go by your taste buds :D
    - prior planning prevents poor performance!

    Me too!

    I make my stock in a big Le Creuset casserole pan and always leave it to cool with lid on overnight. I strain it and then decant into plastic pots with lids and into the freezer. When I come to use it, it's defrosted in the fridge overnight and then boiled before used in anything. Have always done it this way and no harm has come to me yet - have wondered in the past about leaving it for so long, but like most other people have no room in the fridge.

    Made some last night as it happens ;)

    Well I was decanting mine into pots to go into the freezer so I had plenty for risotto and noticed a wee black thing bobbing about but thought nothing off it

    Til I got to the bottom of it and there was a dead spider floating with his lil legs all curled up under him!!!! Heaven knows when that dropped in but I immediately threw all the stock down the sink - much to the disgust of my OH who reckoned that it would be fine as what could we catch off a spiddy spider????

    So now I have no stock in the freezer and 10 bags of caranoli (?) rice (the posh stuff) from when it was reduced to 27p in Home bargains and I cleared them out LOL - but honestly, would you have eaten it????? :p

    I leave mine often overnight and then boil it in the morning before straining it - it should be fine after a good boiling
