have cooked my second rubber chicken thanks to this board. The first time I made soup with the stock straight away. But I was wondering how long the stock will keep and if it will freeze? If you freeze it how do you do it? Do you put it in a jug and cover it in cling film? Don't know if a jug will fit in my freezer.
Also how long can I keep the remainder chicken in the fridge for?
We had chicken and chips with gravy last night, I am making a chicken curry for tea tonight and am having chicken sandwiches for lunch, but there is still loads left over and I don't have enough ingrediants to make much else until Friday (payday).
Any help greatly appreciated.

Chicken stock freezes fine. Put it in anything with a spill proof lid...tupperware boxes, zip loc bags (keep upright) or even decant into ice cube trays then when frozen pop into a bag.
I think about 3 days is the rule for cooked chicken in the fridge, although I have often kept mine well wrapped for 5 days & don't seem to have suffered too much! If in doubt, divide up into relevent portion sizes & pop into the freezer even if only for a day or 2. Allow to defrost thoroughly then use as planned.

Stock will freeze fine, I usually pour it into a square box. If you don't freeze it you are supposed to bring to the boil each day to keep fresh. (I would freeze!)
You can also use chicken stock to cook rice in....I do this somtimes when I don't want to make soup but need to use it up. I make risotto, and use the chicken meat in it too. (Lay it on the top of the rice when it is nearly cooked and it will heat though in the steam and not turn into chicken cotton wool!)
If you are eating the chicken meat I'd keep it two or three days in the fridge... nothing ever lasts anylonger than that here anyway LOL!

I put a freezer bag into a plastic container and freeze the stock, that way I get lots of neat 'blocks' which are easily stored. (You remove the plastic container next day.) I love making soups with my stock - and any leftover amounts are frozen in this way too.
A really nice way of using up leftover chicken bits is to cook any vegs by sauteing them in a little butter or oil, cover with the stock and finish cooking them, just before serving add the bits of chicken (and any leftover cooked veg). If you make your veg pieces large you can serve this for dinner and it's lovely and filling - you can also add some (cooked) pulses - (butter beans, kidney beans etc) which bulk out and make a very economical satisfying meal.0 -
I always measure the stock (when I remember) and write on the baggie or label if it is a box how much. Makes life easier.... Did once buy ice lolly bags and freeze the stock in them but decided it was just too much bother - I know people who do (one ice lolly is equal to a stock cube if the stock is reduced down).0

I just stuck all my chicken soup in a box about the right size and bunged it in the freezer
I guess now it's frozen I could take it out the box to re-use this and just put the soup in a plastic bag.
As for recipies then soup is alays a good-un I thinkI used the stock and just added some carrots and leeks and chicken meat and then made some mini dumplings, was scrummy!

Taste it, if it should taste even a little bit off bin it, but personally I would think it will be fine. Do remember to reheat it thoroughly0

It is probably fine if it has been in the fridge. Give it a good sniff - you can tell a lot from the smell of something.0
