Can I make a cake with only one egg?

    Does anyone have any sweet recipes that only use an egg. Most seem to take 2, I did try to use one in some banana cupcakes but the little rock cakes turned out badly :rotfl:

    Halve all the quantities and make only half the number specified?
    Warning ..... I'm a peri-menopausal axe-wielding maniac ;)
  • Nothing sweeter than a couple of decent bangers under the grill, some chips, served with the one remaining egg. You may be sweet, but those who have to do with leftovers, may think differingly.

    Welsh tea bread contains no fat and only one egg.
    [FONT=Verdana, sans-serif]Tea Loaf[/FONT]


    [FONT=Verdana, sans-serif]3/4 pint of cold tea (strained)
    7 oz soft brown sugar
    2 oz chopped mixed peel
    6 oz currants
    5 oz raisins
    10 oz self raising flour
    1 medium egg lightly beaten

    Oven settings: 160 c / 325 F / Gas mark 3

    Place the tea, sugar, peel, currents and raisins in a bowl, cover and leave to stand overnight.

    Stir the flour into the fruit. Add the egg, stir well and pour into a lightly greased 2lb loaf tin.

    Cook in the centre of a preheated oven for 1 3/4 to 2 hours

    To test to see if it is cooked, insert a skewer (or an old metal knitting needle) - if it comes out clean it is cooked.

    Serve thickly sliced, spread with butter[/FONT]

  • Make some pancakes! Most batter mixes only need one egg [I buy the mixes as HM mixtures dont pancakeize for me] but I assume a HM batter will be the same!
    Douse in syrup for sweetness of course ;)

    Hi PK i made carrot and apple muffins at the weekend and realised halfway through recipe that I didnt have any eggs :o so I just made them without egg and added a splash of milk instead, and they still rose and were yummy

    110 g self raising flour
    80g brown sugar
    1/2 tsp cinnamon
    tiny pinch salt
    75ml oil
    2 small carrots
    2 small eating apples
    splash of milk

    Preheat oven to 180C
    mix flour, sugar, salt and cinnamon
    add oil & milk and fold
    stir in finely grated apple and carrot
    Spoon into muffin cases - enough for 6 muffins and bake for 25-35 min
    Leave in tin to cool a little then turn out
    Try not to eat them all in one day :p
