Can I make a cake with only one egg?

I fancy making something nice, but I have only one egg. It's only for me, but will splitting a recipe make it too small to cook nicely?
Any ideas of what I could make? I love scones BTW.

Queen cakes
1 egg ,2oz SR flour,2oz soft marg,2oz caster sugar mix it up and put it in paper cases .

You could make a small cake, if you had tins small enough, 2oz of s/r flour, marg and sugar with one egg is half a basic cake mix.
My recipe for scones doesnt have egg,
8oz s/r flour,
1oz caster sugar,
2 oz softened butter,
4fl oz (120ml) milk.
Mix ingredients, cut or shape into rounds and bake,
220 C for 12 - 15 mins.

Well you don't need an egg for scones (except possibly to brush the top). Most cake recipes can be split, but you need to check cooking times (obviously). As a general rule most small cakes (like fairy cakes) need about 12 mins at 190C. Anything bigger, cook until a) the top springs back when pushed or b) a skewer comes out clean. If you don't have a skewer use a piece of uncooked spaghetti.

You could make 6 large muffins with one egg (I use Delia's recipe). I also have a recipe at home for a healthy lemon and poppy seed cake that only uses one egg. Or you could make half a 2 egg sponge cake!0

You're welcome, but I know I didn't think it up - I must have read it somewhere. Don't be too rough otherwise you'll end up with it broken in the cake, adding an interesting crunchy texture that might not be appreciated!

I decided to have a go at shortbread instead, but it wouldn't bind together into the promised dough so I added a bit of water, and when that didn;t work I just shoved it in a tin!!!

Because muffins have a raising agent in them- baking powder,the egg is not essential.I always replace the egg with 3-4 tbsp of milk.They come out fine,and cheaper0
