I have the book Muffins Fast and Fantastic by Susan Reimer, which I use a lot, and there are tons of muffin recipes in there that only use one egg. The recipes all make 12 muffins.0

I love one egg baking! I always buy free range and treat eggs as a luxury not a necessity. I don't think I've ever made a recipe asking for more than 2 eggs! (except at Christmas!).
My two favourite one egg recipes are:
1. Banana and chocolate buns from Lucy at Attic 24. They are delicious and you get 12 cakes from your one egg - magic!

2. The best chocolate brownies I have ever tasted. Yes you did read correctly, you need to add mayonnaise :eek:. Keep the faith, they really are delicious!

These would probably make a bit much for your little ones, but remember than most baked goodies freeze well. 12 cakes might be too much for small tummies so all the more leftover for you
Alternatively go for no egg baking and make a batch of twinks hobnobs (having been recently converted I cannot get enough of them!)0 -

There is also a thread discussing egg substitutes which mentions using vinegar to sub one egg, so you could always make your 12 with one egg and vinegar to replace the other egg?

Scones only use one egg. They only keep for a couple of days though.
How about making a batch of whatever yu fancy, then freezing half? I often do this, as there's only me and OH, and he doesn't have much of a sweet tooth, so things would go off if I didn't freeze for a later date.

My OH loves my banana cake:
4oz marg
4oz sugar
pinch salt
1tsp baking powder
3 mashed ripe bananas
1 egg
8oz self raising flour
put it in a loaf tin and ccok for 40 mins at 180C/400F
Its a good way of using up old bananas too, and it doesn't matter if they are bruised.

Hi guys, as the title says really......it's my Mum's birthday tomorrow and I'd like to bake her a cake if possible, I only have 2 eggs though and I don't want to go to the shop as I'll end up spending a fortune in both time and money!!! It doesn't need to be a big cake as there won't be many people. I have most basic baking ingredients and even a few fancy bits (coconut, ginger, mixed spice, honey, syrup, cocoa).

First thing that comes to mind is a chocolate cake - maybe using honey/syrup instead of sugar, adding a small amount of coconut but not too much, or using the coconut/ginger/mixed spice to sprinkle it after its baked? I do not have a recipe - maybe an online check or others may know?0
