Can I make a cake with only one egg?

I fancy making something nice, but I have only one egg. It's only for me, but will splitting a recipe make it too small to cook nicely? Any ideas of what I could make? I love scones BTW.

Pancake mix

1 egg
3oz Plain Flour
5 fl oz milk.

Red hot pan

Scoop in.

Fry.

Toss, or if you are a wimp unlike TILAMS, scratch away using the pallete knife.

Serve with lemon juice etc.
