Substitution Tips for Flax Seed
Substituting Eggs – 1 Tablespoon of ground Omega Golden Flax Seed plus 3 tablespoons water for each egg.
Substitute a 1:3 ratio of ground flax seed and water mixture for each egg in recipes for pancakes, muffins and cookies. Allow to sit for several minutes together before adding to your recipe.
Substituting Fat – 3 Tablespoons ground Omega Golden Flax Seed = 1 Tablespoon Margarine, butter or cooking oil.
Substitute for all or some of the fat depending on the recipe.To substitute for all of the fat with flax seed, increase liquid by 75% as ground flax absorbs liquid. Baked goods brown more quickly.
As I've got an endless supply of eggs I haven't tried this but if you keep linseed at hand (excellent scource of veggie omega) then it may come in useful in an emergency. I only use non-organic brown linseed as the golden is a lot more expensive and has no nutritional difference.My weight loss following Doktor Dahlqvist' Dietary Program

Totally vegan household here. We have cakes regularly, and they are delish! You'll find an absolute TON of recipes on http://www.vegan-food.net/category/cakes/ Lots of vegan food is cheap, nutritious, and dare I say it: FUN

Thanks for the link. I lean towards vegan food (although I eat fish!). I try and cut out unnecesary eggs and milk (use rice milk), but I like my cheese and ice/cream sometimes...0

Hi Guys
Middle of the night though - so bear with me.
Household is me. DS (9) and DS (2 - well nearly). We budget, we leftover, we woopsie, we batch cook - we rubber chicken and we soup - :rotfl:
We also bake - but the thing is most of my recipe books are for 2 eggs worth of mixture - and make things like - trays of 12 fairy cakes.
Now I am on SW - so my sweet stuff is very rationned - and 12 of anything is too much for 2 littlies (they get really bored, and cake gets really stale).
I would love to bake more often but in littler quantities (got a halogen oven so 6 buns etc is perfect size)
My question is -
What do you bake that has only one egg in it????
Things like
Scotch pancakes
4oz SR
1oz sugar
1 egg
Milk
or for than instance - french crepes and yorkshire pudding mix.
Hoping to treat my boys at 4 o'clock today when they get in from school.

A few thoughts - You could make a very small batch and just halve the other ingredients in your 2-egg recipes? If you don't actually want to use the egg there are lots of biscuit recipes that don't use egg at all. I think I remember using a banana muffin recipe that only used one egg as well. There is a thread on here somewhere about egg substitutes as well - I'm pretty sure vinegar can be involved or soya flour.0

I would just halve the quantities, or freeze the remainder ( assuming you have a freezer)
