Can I make a cake with only one egg?

    Oh, a cake! :doh:

    This parkin recipe uses one egg. Although it should be left to improve for a couple of days, so might be a bit short notice. :)
    If you lend someone a tenner and never see them again, it was probably worth it.

    any basic sponge recipe can be cut down, so I'd use 4oz marge, 4oz sugar, 4oz flour and 2 egs for the sponge, then add whatever you have to give it the flavour you like.

    That is what I would do... but I use butter :p

    Fill with jam if you have it.

    If you have icing sugar you could make a buttercream frosting and filling if you don't have jam.

  • I always weigh my eggs... if two eggs weigh 4 oz, then I use 4oz of flour, butter and sugar!

    So you can always make a small sponge of cupcakes and ice them!!

    Thanks for the ideas guys, good old Bero came good and I ended up making a gingerbread loaf, I'm hoping 24 hours will be enough to improve it so its nice and sticky but we can always have it for pud with custard if not! I have to say, so far it looks like being the best cake I've baked in the electric fan oven in this house...I HATE it! Give me gas any day!

    Does anyone have any sweet recipes that only use an egg. Most seem to take 2, I did try to use one in some banana cupcakes but the little rock cakes turned out badly :rotfl:

    CHOCOLATE CRUNCH
    142g / 5oz Self Raising Flour
    142g / 5oz Plain Flour
    142g / 5oz Sugar
    142g / 5oz Margarine
    1 egg
    (28g) 1oz to (56g) 2oz Coco powder
    2 drops of Vanilla Extract

    Melt the fat in a pan, add 2 drops of vanilla extract.Mix in the Sugar, Coco powder and flour.
    Beat in 1 egg

    Place in to greased tin, push down really firmly. It will be dry, thats ok.

    Brush with water and sprinkle liberally with more sugar.

    Bake at 180c (350f, Gas Mark 4) for 30 mins Yummy with custard, just as nice the day after as a kind of biscuit. I have also made this with just self raising flour and it was lovely.

    When baking sponges, the assumption is that 1 egg = 2 ounces. So if you follow that rule, you should be able to make a small batch of fairy cakes:

    2 oz butter
    2 oz sugar
    1 egg
    2 oz flour

    Add 1/4 tsp of vanilla essence to the (beaten) egg for a lovely vanilla flavour.

    You'll get about 6-8 fairy cake sized or 3-4 muffin case sized cakes.
    You had me at your proper use of "you're".
