Meatballs - finely chop garlic, sage and mix in with breadcrumbs. Shape into balls, brown in a frying pan and then cook in a lidded casserole dish with a tomato-based sauce.
Burgers - plenty of options for flavouring, you could finely chopped apple, or a little sage and onion, and sweet chilli is good too ( http://www.bbcgoodfood.com/recipes/4598/sweet-chilli-pork-burgers ).

Anything you'd use beef mince for.
I always buy pork (and turkey) mince, because it's lower in fat (not only better for you, but also it doesn't reduce down as much) and cheaper than beef mince.
For minced meat roll, I "beef" it up with a beef stock cube, but don't bother for Bolognese sauce, chilli con carne or keema curry, as the sauce and chilli gives the flavour.The acquisition of wealth is no longer the driving force in my life.0 -

I've got a couple of kilos of lean pork mince in the freezer (thank you Lidl's half-price weekend deals!) and I'm seriously lacking in inspiration.
I have a slow cooker which I often use for bolognaise-type sauces and joints of meat, but I checked the slow cooker indexed recipes and couldn't find anything for pork mince.
A friend gave me a recipe for Swedish meatballs which sounded nice, but I think it was a diet recipe and used a lot of things that I wouldn't normally have in my kitchen (fresh dill, creme fraiche etc.). And as neither I nor my fiance can eat even slightly hot or spicy foods, things like burritos or curries are out of the equation.
Anyone have any other inspiration or suggestions, ideally using store cupboard ingredients?0 -
Onions, red pepper first into the pan. Than add the meat and stir it all around. Towards the end put some eggs in it and mix it all. Serve with some bread. Healthy and will taste delicious. Also add some salt, pepper and if you have red pepper while frying the mince in the pan.0

There is nothing stopping you using pork mince instead of minced beef. The results will obviously differ in flavour somewhat, but most 'savoury' recipes you can substitute one meat for another. I regularly make make pasta sauces with pork, turkey or even lamb mince.For myself I am an optimist - there does not seem to be much use being anything else.
