    I use pork mince for anything I would use beef mince for. I found this recipie and will try it out next week, as I have some beans in the garden that will be ready to eat.

    One Pot Pork & Rice.

    1 lb Pork Mince
    1 lg onion chopped
    1 red pepper chopped
    14oz can chopped tomatoes
    1 tblsp oil
    1 pint beef stock
    chilli powder and salt & pepper to taste
    1 lb green beans
    14oz long grain rice.

    Pre heat oven to 180*c 350*f or gas 4.

    Heat the oil in a large flameproof casserole. Add the onion red pepper and pork and cook until lightly browned.
    Add the rice and stir for 2 mins
    Add the tomatoes stock beans chilli powder and seasoning.
    Bring to the boil, put on the lid and transfer to the oven and bake for 40mins

    This serves 4 people. As there is only 2 of us I think I will use the left overs for enchilladas

    Hi guys!

    Ive got some pork mince in the freezer that I dont know what to do with? last time i made bolognaise but I didnt really like the taste!

    any suggestions greatly appreciated!

  • I make herby pork burgers by adding breadcrumbs, oinion,an egg and mixed herbs. If you give the meat a whizz first they should keep their shape.

  • Chinese style pork -like the filling you get for lettuce leaves, I've forgotten what it is called. Do you have some beansprouts and/or water chestnuts ? If not use finely diced carrot as you need a bit of crunch. Cook your mince with some 5 spice powder, soy sauce or any Chinese flavourings, add spring onions, garlic, ginger and the veg. Serve with rice or noodles. Not very authentic, but yummy.

  • Give this recipe a try - a favourite in our house. Quick, easy and cheap-ish.Preparation time: 5 minsCooking time: 8 minsServes 21tbsp vegetable oil350g pork mince1cm piece root ginger, peeled and grated1 clove garlic, crushed1 long red chilli, deseeded and chopped1x300g pack of fresh cut vegetable stir fry2tbsp oyster sauce1tsp fish sauce45ml (3tbsp) waterPinch of caster sugarHandful of fresh basil leaves, roughly tornHeat the oil in a large frying pan or wok, add the pork mince and stir fry for 5 mins until browned. Add the ginger, garlic and red chilli and stir fry for 30 secs. Add the vegetables and stir fry for a further min.Add the oyster sauce, fish sauce and sugar along with the water and stir fry for 1 min. Remove from heat, stir in basil leaves and transfer to a serving bowl. Serve with freshly cooked noodles, sliced spring onions, rice vinegar with red chillies and wedges of lime.

    If you have any chicken livers, you could make dirty rice. Pork mince makes very nice meatballs - flavour it with fennel seeds.
