what I meant was: why are there so many ingredients in food that are a million miles away from the basic and simple ingredients in home made. So many chemicals etc

Right,sorry about that Kittie! Yes,quite why should we have to indeed?
I agree it would be lovely to assume all the ingredients in a product were;
1) good for us
2) things we recognise as edible
Mind you I'd still have to scrutinise everything for peanuts
Btw,The Food Programme had an interview with someone from M&S who said they were working towards simplifying and reducing the ingredients in their products (as well as eliminating HVOs) so that they were 'more like homemade'.I think I'll just stick to real homemade food0 -

Interesting article by Felicity Lawrence (Not on the Label author) in todays Guardian as part of their 'Food Week':
"At the time, M&S shepherd's pie was typical of ready meals, containing 57 ingredients, many of them additives buried in compound ingredients such as stock and sauce, and several of them things no cook would ever use at home. An internal inventory of hydrogenated fats found they were present in 1,200 out of a total of roughly 4,000 M&S lines. Mr Gregory decided they all had to go as fast as possible. "
The shepherd's pie is now down to 24 ingredients.
By moving fast, Marks & Spencer was able to claim a competitive advantage: it had removed hydrogenated fat from 98% of its food by Easter and now relies on far fewer additives. Other retailers are looking to catch up.

24 ingredients is still a lot more than I would use for a homemade Shepherds Pie though! Will have to have a look next time I am in M&S to see exactly what's in theirs..."The happiest of people don't necessarily have the

Im a Chemist by trade and after reading this board there seems to be a bit of confusions regarding Hydrogenated Vegetable oil. Hydrogenated vegetable oil can be partially or fully hydrogenated. Its only those labelled "partically hydrogenated vegatable fats" that are a danger to health. Fully hydrogenated fats are not a danger to heath and are often employed as a replacment for the nasty partically hydrogenated variety. If you dont beleive me read up for yourselves.
