    dont forget theres a lunchbox thread on the food section also :) theres lots of scrummy stuff on there

    my 4 yr old ds has packed lunch 3 times a week, normally a sandwich or roll, with juice, a fruit,biscuits, a fruit "snack (kinda like a fruit roll up or yogurt and raisins ect), some kind of cake or muffin, packet of crisps, yogurt and cheese

    yes he eats quite a lot :o

    im going to be making lemon and poppy seed muffins for his lunch box this week, (i probably wont make them topped with the lemon sugar)

    3 tsp finely grated lemon zest
    220g caster sugar (1 cup)
    335g of self raising flour (2 1/4 cup)
    2 TBS poppy seeds
    80ml of fresh lemon juice (1/3 cup)
    250ml of milk (1 cup)
    60g of butter, melted (1/3 cup)
    2 large free range eggs, beaten

    Preheat the oven to 200*C/400*F/ gas mark 6. Butter a 12 cup muffin cup pan really well. Set aside.

    Place the sugar and lemon zest into a large bowl. Rub the two together with your fingertips really well. (This smells great!) Remove 3 TBS of the mixture and set aside. Sift the flour into the remainder. Stir in the poppy seeds. Whisk together the lemon juice, milk, beaten eggs and melted butter. Make a well in the centre of the dry ingredients and add the liquid all at once. Stir together only to combine. Spoon into the prepared muffin cups, dividing it equally.

    Sprinkle the tops of each with the reserved lemon sugar.

    Bake for 20 to 25 minutes, until well risen and a toothpick inserted in the centre comes out clean. Allow to cool in the pan for ten minutes before removing to a wire rack to finish cooling. Serve warm or at room temperature.

  • I make flapjacks or rice crispy cakes or cornflake ones.
    Instead if dairy,ea stackables I buy a box of Rita and cut up pieces of cheese/ham or spread some with cheese spread ds loves them.

  • This is a recipe that I got from my mummy but I think it's quite a standard recipe?? They are in no way healthy but they were my favourite sweet treat when I was growing up! :)

    No baking is needed so quick and easy with minimal fuss...

    225g Rich Tea Biscuits
    170g Plain Chocolate
    115g Butter
    115g Golden Syrup
    1tbsp Cocoa Powder
    55g Raisins
    30g Glace Cherries

    1.) Crush biscuits into small chunks
    2.) Break up choc, add butter, syrup & cocoa - heat gently while stirring until it forms a thick sauce
    3.) Add the biscuits, raisins and cherries - mixing to cover in the sauce
    4.) Press into a greased tin & leave to cool

    Enjoy!

    I would put small plum tomatoes, or seedless grapes, or small cheese muffins or homemade oat flapjacks in the lunchbox.
    Small fruit muffins, cheese scones with a bit of cheese in the middle, ham and cheese muffins, small cubes of mild cheddar, raisins, carrot batons, sugar snap peas, dried fruit apple rings, apricots or pears.
    Oh, and rice cakes with marmite or any spread that the child likes.

    ;) Felines are my favourite ;)
  • great thread thanks, i'm always looking for something different (and cheaper!) for dd's lunch box.

    Did have to google twinks though after reading!!
    Still here..... but working on that!

    Hi all just wondering if anyone could give me some ideas, my two kids are always ravenous after school. Basically getting really stuck for ideas for things I can take for them that is healthy and portable. I don't mind baking things as long as it will keep.

    Stuff I take now is;
    Fruit
    popcorn (the microwave stuff n put it in small bags)
    Breadsticks
    cereal bars

    Any help.

    How about banana loaf or weetabix cake?
    I don't think either of these have huge amounts of fat in.
    Not too sure of the sugar content though!
