Healthy snacks for kids

  • When my husband is on the go with work, I make him 'energy' bars. They're easy to bake and full of wholesome things. I buy my ingredients (if I can) from value ranges at the supermarket and in lidl so it works out pretty cheap and there is enough fruit and muesli and seeds to make the recipe time and again. The recipe is:

    240g peanut butter
    240g honey
    175g muesli
    200g dried druit of your choice
    100g mixed seeds

    1. Heat the honey and peanut butter in a saucepan and stir together. Take off the heat.
    2. Stir in all the other ingredients
    3. Transfer to a lined baking dish or tray. Cook in a pre-heated oved on 200C for 12 minutes or until golden
    4. Leave in pan to cool completely and harden. Slice into pieces (makes about 14 generous bars).

    Once they're cooked I wrap them individually in foil or greaseproof paper and keep them in an airtight tub and they last the week. I've also made them into energy balls, but rolling them into golf balls before baking on a baking sheet and they are great for a smaller portion, so maybe better for kids?

    Do they sit in the car and have their snack or are they walking with it? If they're eating it in the car, you can get little pots with lids that are ideal for yoghurt (and dont leak!). You can then buy one of the gigantic tubs of yoghurt from Lidl (or make your own natural yoghurt) and decant a portion for them.

    I make Nigella's breakfast bars and find them brilliant- you can vary what you put in but because they have nuts and seeds as well as the fruit they are very filling. Her recipe says to make 16 but they are HUGE, I always get 20 if not 24. Easily portable, last for a good week in an airtight tub and freeze well.
    They call me Dr Worm... I'm interested in things; I'm not a real doctor but I am a real worm. :grin:

    They sound lovely! I think we've got everything in for those apart from seeds, but I suppose you can mix and match really.

    If I have falafels at lunch at home I always save a couple and DD and I munch on them as we walk home. I just wrap them in foil/put them in a box and pop them in my bag.

    Sometimes we share a couple of carrots too.

    Raisins are a favourite but I'm quite wary of their sugar content as DD gets a pudding and a biscuit and fruit snack at school.

    Fruit muffins are always good, my daughter loves them. I have made them with bananas or raspberries or blueberries (whatever is on the reduced bit in Morrisons)
