    Asda do vegetarian versions of Green/Kalamata Olive tapenade (It's vegan too (:) which I have with whole olives and salad leaves, and they also do a Bruscetta topping too which is basically olives, sun dried tomatoes and peppers, which are both super tasty for a speedy sandwich.
    I also make veggie pate with tomatoes, peppers, olives, chili, onion, garlic, mixed herbs and pepper blended up with the excess liquid drained off which is also awesome if I say so myself, which'll keep in the fridge for a while and goes well in sandwiches and wraps.

    Grated carrot, cucumber, shredded lettuce, spring onion, salt and pepper and mayo on wholemeal bread

    One of my favourite veggie sandwich fillers is the Philly Tomato and Basil with celery and cut up cherry toms.

    Make some falafels - and make them burger-shaped, or in small strips.
    Boiled Egg/salad cream (with or without tomato)
    Cheese/salad cream
    Cheese/apple/peppers
    Veggie sausages/fried onions
    Crisps and grated cheese

    Interesting recipe in the Hugh Fearnley Whittingstall Veg book for spicy carrots and chickpeas in pitta, not tried it yet but will do in the next week or so.

    Griddled haloumi and courgette is also very good, better hot but have also taken it to work the next day cold.

    I make a split pea dip, made like houmous but quicker/cheaper as can make from dried split peas, cooked with cumin seeds, garlic, olive oil etc. Good with salad in pitta. Better still topped with dukkah.
  • I make bean 'pate' by frying onion, add a tin of beans and a splash of water to loosen, boil a little to soften, add mango chutney or similar, mash to a rough paste and allow to cool.

    Keeps a couple of days, add a little chilli if you want it spicier
    I love food, hate waste and have a penchant for sparkly things ::D

  • You have the option of different cheeses, dips/spreads/pickles, salads and vegetables. For example

    Brie and cranberry
    Brie and grape
    Stilton and pear
    Mediterranean veg in a tomato sauce
    Mediterranean veg in pesto
    Feta and veg
    Quorn 'ham' or 'bacon' with salad (i.e. BLT)
    Quorn 'sausage' with onions/ketchup
    Egg mayonnaise
    Halloumi and olives
    Grated carrot & hummus
    Mushroom pate with veg
    Three cheese mix with mayo (and pineapple)
    Cheese and onion
    Cheese and celery
    Cheese and pickle
    Cheese and tomato chutney/salsa

    Instead of a sandwich, you could also try a wrap/pitta bread/bagel/ryvita/oat cakes/rice cakes etc.

    If you can't be faffed to make veggie pate, Tartex in a tube from Holland & Barrett is really nice. Can also be squirted out to fill half hard boiled eggs or pieces of celery.
