  • This is how I make my white sauce:

    White Sauce/ Cheese Sauce
    2 oz marg or butter
    2 oz flour
    500ml milk
    seasoning

    Method:
    Make white sauce: Melt butter stir in flour until mix is thick then slowly add milk a bit at a time whisking continuously until all is added in and you have a thick creamy sauce. Let cook for a few minutes to ensure flour roux is cooked thoroughly. Season with salt and pepper to taste. If making cheese sauce stir in 2 oz grated cheese at this stage and allow to melt.

    Do you just use milk and flour for your sauce or do you make a "roux" from flour and fat cooked together, then thinned out with milk?? If you just use milk and flour, that's possibly why your sauce is going runny.

    The sauce goes back to being watery :( Its as thick as anything when in the pan but after a couple of minutes under the grill, its like water.

    Couple of thoughts for you - as ab and jay-jay said - butter is best.
    Also, cauli is a very watery veg, so not only do you need to drain it very well, but it's also best to make it with left overs (seriously!).

    When our local farm shop have 4 cauli's for £1, I steam a large pot of cauli, some for the meal we're having and some for leftovers so I can make cauli-cheese. It simply means that I cook my cauliflower cheese in the oven instead of browning it off under the grill because the veg has to be reheated all the way through.

    ark - a savoury crumble is absolutely delish!!! I've made vegetable crumbles and meat crumbles and meat+veg crumbles (chicken crumble made with l/o roast chicken is lovely with roasted veggies). Hope you enjoy it on Thursday. :drool:

    I alternative sliced potatoes and onions in a large dish - about 3 layers of each, I use our mandolin thingy to slice thinly. Then I add about 3 tablespoons of water and throw it in the microwave for about 5 mins, this helps to cook the potatoes a bit. The I put chopped cauliflower and broccoli over the potato and onion mix, then top it all with a cheese sauce (not too thick as it needs to finish cooking the potatoes, and not too thin and the cauliflowers will produce a bit of water), then I cover it with foil and pop it in the oven for 45mins - 1hr. This can be eaten as a main dish on it's own, or you can add crusty bread and a salad.

    If I'm in a hurry and just boiling the cauliflower and adding a cheese sauce over the top, it's nice with some veggie sausages and mini roast potatoes (about 20mins for everything if you bung the sausages and potatoes in the oven (chop the potatoes into half inch cubes) whilst you make the sauce and boil the cauliflower.

    Making me feel really hungry now - good job the cinnamon rolls are nearly cooked!

    Think that I shall be using up the cauli we got in the veg box for tea tomorrow!

    BTW - I always use the green leafy bits of the cauliflower too - adds a bit more flavour and I can't always give everything to the rabbit and guinea pigs!

    I do that too! I don't use the outer tougher stemmed leaves (my dragons eat those) but the lighter green leaves that are usually stuck firm to the cauli all go in the pot too :D
