  • I do cauliflower, broccoli and macaroni in cheese sauce, top with breadcrumbs and grilled until golden. We usually have this when i need to go shopping and there isn't much in, the cauli and broccoli are a frozen mixed bag from Asda and we always have macaroni (or at least one kind of pasta) in the cupboard.

I had cauliflower cheese with the breadcrumbs etc a few nights back and the kids wanted potato wedges with it. Just chopped up a few spuds and rolled them in olive oil and some all seasoning (Schwartz stuff), but you could use anything to give them a bit of flavour. Roasted them in the oven at 220C for about 45 minutes. Went down a treat with them, they cleared their plates.

I like it with grilled tomatoes. I think the sharper fresher taste of the tomatoes is a good contrast with the rich creamy sauce.

I always have it with 2 or 3 nice sausages then you can dip the sausages in the cheese sauce.

  • To follow on from the topped versions of cauli cheese, I noticed tonight there's a recipe on my packet of porrige that is for cauli and broccoli crumble. I think it's looking like a possibilty for tea on Thursday, so I shall let you all know how it turns out.

steady on you lot !!

I havent mastered the cauliflower cheese sauce bit yet  never mind adding anything else in there
I make the sauce and pour it over the cooked cauliflower, sprinkle it with grated cheese .....then under the grill for a few minutes.
The sauce goes back to being watery :( Its as thick as anything when in the pan but after a couple of minutes under the grill, its like water.

    any ideas

I use about 1/2 pint of milk and add 3 or 4 Tbl/sp of flour, stir till it thickens.
Then I have cheddar cheese already grated in a bowl, I add 1/2 a bowl all at once...wait till its melted in there then add more till I get a nice thick sauce.

Do you mix the flour with some butter before adding the milk?
