Recently I've been buying frozen broccoli and cauliflower as fresh is so much more expensive at the moment. Broccoli has been great but can't quite get cauli right, it's either mush or too chewy. I think I'm going to try poaching rather than microwave. I like to use some grated red leicester or double gloucester as well as cheddar as it gives such a lovely colour.0

I freeze extra portions of mine. I make nice cauliflower cheese but find no takers in my family except for me so I freeze them.
When it defrosts it just needs a few mins in the microwave. If it doesn't look brilliant I sometimes add a bit more fresh cheese sauce and sprinkle a bit more grated cheese on top and then add it to the oven or under the grill.

My favourite accompaniment to cauli cheese is ham/gammon. With peas too.
We would also sometimes have it with roast chicken, but I also think plain healthy fish would be great too.
In my veggie days, it would have been a meal in its own right, or eaten as broc/cauli cheese. Probably with peas and/or sweetcorn because I like the sauce with those veg too. And sometimes with yummy fresh bread. Almost forgot, have also had it as a jacket potato filling. But somehow I just couldn't see me doing that now - fat & carb overload!0
