    Or alternatively chicken and mashed potato (like a cheesy chicken and cauliflower Cumberland pie)..

  • I like it with ham (hot or cold) and savoury rice - yum!
  • Usually serve it with Ham, i sometimes put potato or other veg in it too, (great for using up left over bits and bobs of veg such as broccoli, carrot, sweetcorn etc, and helps to bulk it out so it goes further too!)

    My gran used to put it in a fish pie, fish at the bottom, layer of veg such as carrots & peas, then layer of cauliflower cheese with mash potato on top baked in the oven - yummy!!

    CHEESE SAUCE


    Makes 250ml


    INGREDIENTS

    35g of mature Cheddar cheese
    1 tablespoon of butter
    1 tablespoon of flour

    METHOD

    Grate the cheese.


    Put the butter into a saucepan on a medium heat. Melt the butter. Add the flour and cook for a minute, stirring all the time. Take off the heat. Add the milk a bit at a time. Stir each time to make sure it is smooth. When all the milk has been added, put the pan back on the heat. Bring to the boil. Keep stirring. Turn down the heat until it is just boiling (simmering). Cook for 2 minutes, stirring all the time.


    Take off the heat. Add the cheese to the sauce and mix. Continue to stir until the cheese has melted into the sauce. Season with the pepper.

    ADDITIONS AND ALTERATION

    If the sauce is too thin, add a little bit more flour. If the sauce is too thick, add a little bit more milk. Don’t forget that adding more cheese to improve the flavour will also thicken the sauce.

    Use other full flavoured cheeses. Use ready grated cheese. Add 1 teaspoon of whole grain mustard.

    TIPS

    The trick is to keep stirring.
    The acquisition of wealth is no longer the driving force in my life. :)

    We like ours with gammon ham and roast potatos.

    To make it more of a meal i have done various mixtures of cauli/broc/leeks with pasta stirred through like a bake. Also added bacon or ham, but not essential.

    I use wholegrain mustard in my cheese sauce and find it has two advantages: You don't need as much cheese so you it's healther and cheaper :) About shallow teaspoon then adjust to taste.

  • My friend has cauliflower cheese with her sunday roast. Its actually really nice, although I was dubious at first, cos I'd not heard of that one!

    I sometimes cheat and buy a frozen cauli cheese which I keep in the freezer for whenever I fancy it but dont have a cauliflower, but its admittedly not as good as a made from scratch one.
