Cake without eggs?

    Mayonaise (or vegan substitute) would work as a binder and add richess. It's also acidic so should make the cake rise if you add some bicarbonate of soda. Whatever you use to replace eggs you will need to add a raising agent so either use something acidic (I've had brilliant results with yoghurt, sour cream or milk aciduated with a little lemon juice) and some bicarbonate of soda or if you do not add an acidic ingredient add baking powder or substitute self raising flour for plain. If you just made a straight swap of eggs for mashed banana, soya flour etc. you'd get a very heavy, dense, flat cake. You need to aim to replace all the functions of the egg, i.e. binder, enricher, raiser. Whatever will serve those functions and suit or not affect the taste of the cake you can use. It's science not some black art after all.

    Hi Guys ben away for a while but im back.

    im after fun snacky recipies i can make with Joel but without using eggs, have the basics in my cupboard i could pop
    tomorrow for the rest but just dont fancy buying and breaking eggs as a) they have to survive an hours bus ride, and b) Bradleys allergic to them in a fried etc form but im not really sure how and if he will react with them in recipies
    (cupboard has flour, caster/brown sugar, oats, golden syrup, rice flour, icing suger, vanilla flavouring,saltanas, also have butter)

    will the chocolate cake recipie work if i put in walnuts and coffee inreplace of chocolate?

    Probably a bit late but I love Delia's banana and chocolate chip slice which is made without eggs. I use my brown bananas for this!!! I often make it without the topping and eat it warm with ice cream.

    Do you mean the Eggless Chocolate Bun recipe I posted ? If so, it will work I'm sure, but remember to replace the cocoa powder with the same quantity of flour.

    seeing as people have some great cake ideas, anyone know of any recipes for eggless chocolate muffins/cupcakes (while we're on the subject is there even a different between the 2?)
    found one but it needs cornstarch which i don't have
