Is there anything I can use in place of an egg in a cake recipe?
have run out and don't really want to pay convienience store prices.

Soya flour works quite well - 1 heaped tbsp plus 1 tbsp water.

I made a big cake with the muffin recipe
worked a treat, that mix made 2, but seems to vanish even quicker than the little ones. We did cherry and chocolate this weekend as noone could decide what to have, apart from DS2 who wanted to make them green as usual :rolleyes: he likes green everything ! Very nice
I might invest in some soya flour myself, I was going to buy powdered egg, but if that works the same. When I have eggs I have loads (like now there is about 45 in the kitchen) but then I run out and don't realise.One day I might be more organised...........

I only ever bake vegan cakes and find sunflower/vegetable/light olive oil does the trick without eggs.The stupid things you do, you regret... if you have any sense, and if you don't regret them, maybe you're stupid. - Katharine Hepburn0

The eggs are there mainly for the rising I think. Using baking powder and then adding a bit of cider vinegar right at the end gives the lift you will need. Personally I find the texture of vegan cakes far better.0
