I'm suffering from a horribly sweet tooth this morning and NEED to make some cake. Just one slight problem. I haven't got any eggs in the fridge. I don't suppose anyone's got a recipe for a yummy cake that doesn't need eggs? I've got most of the basics in stock: milk, butter, flour, sugar etc.

My speciality! dd is allergic to eggs.
Chocolate Cake without eggs(adapted from Marguerite Patten's We''ll Eat Again)
Melt in a pan
3 oz of butter
1 Tbsp golden syrup
Mix together
8 oz plain flour
1/2 tsp salt
1 oz cocoa
1 tsp baking powder
1/2 tsp bicarb
2 oz sugar
Stir in butter and syrup mixture
Add about 1/2 pt of warm water to give a very soft mixture.
Spoon into 2 greased sandwich tins.
Bake for about 30 mins at 180c
Sandwich with cream,buttercream or apricot jam
Norfolk Vinegar Cake(an eggless fruit cake)
Rub together
8 oz butter
1 lb plain flour
Stir in
8 oz sugar
8 oz raisins
8 oz sultanas
In a large jug measure out
8 fl oz milk
add
2 tbsp vineger
1 tsp bicarb blended with 1 tbsp milk
Add to cake mixture,stir well
Spoon into a greased and lined 9 inch tin
bake for 30 mins at 180 c,then reduce temp to 150 and bake for another 1-1 1/4 hours until a skewer comes out clean.0 -
I knew I could rely on you guys! It's going to have to be the chocolate cake today as I've got half a jar of golden syrup in the cupboard that needs using up. However, I'm intrigued by the vinegar suggestions. One of the recipes that Raeble suggested mentions that vinegar cakes were baked at times when the hens weren't laying, which makes a lot of sense to me. Am definitely going to have a go next week at a fruit cake with vinegar as recommended by Raeble and Thriftlady. Has anyone actually tried using vinegar to replace eggs in 'normal' recipes?0

Here's a recipe for a 'boiled 'fruit cake.
4oz margarine or butter if you'r posh
1/2 pint cold tea
8oz dried fruit, sultanas etc
4oz sugar any colour
1 tablespoon golden syrup
9 oz self raising flour
1 level teaspoon bicarb
pinch of salt
1/2 teaspoon mixed spice
1/4 teaspoon cinnamon
1 oz demera sugar optional.
set the oven at 170 C
Melt the first 5 ingredients and simmer for 5 mins (that's the boiled bit) then cool.
Mix fruit into the dry ingredients than stir in the cooled liquid, put into a greased and lined 8" cake tin, sprinkle with the demera sugar and bake for 1hr 20mins. Test with a skewer to see if done.
Try to let it cool before you tuck in! For all you OS'ers this has the bicarb but not the vinegar.0 -

Here's a muffin recipe without eggs
Sift together in a large bowl
9 oz plain flour
1 tbsp baking powder
1/2 tsp salt
3-4 oz sugar
In another bowl,combine

3 fl oz sunflower oil
3-4 tbsp milk(this replaces 1 egg)
Add wet to dry
Combine well but do not overbeat on no account use electric beaters!
Spoon into greased/lined muffin tins
Bake for 25 mins at 200c
This makes a plain muffin.You can add all sorts of things to this basic mix.Try one(or 2) of these;
3 oz choc chips
3 oz berries/glace cherries
3oz raisins/dried apricots/sultanas
3oz coconut/nuts/sunflower seeds0 -
You can also replace 1 egg with 1 heaped tbsp of soya flour(available at health food shops) + 1 tbsp water.This was recommended in The Tightwad Gazette.I've tried it in pancakes(US style ones) and cookies but not in cakes.0

Heres one for an eggless, sugarless, fatfree cake, it tastes great,
EGGLESS, FATLESS,SUGARLESS CAKE.
Ingredients.
6oz brown flour. (if plain, use 3tsp baking powder)
2oz ground almonds 2tsp mixed spice
1lb mixed fruit 4oz dates & 4oz apricots
Rind of orange or lemon ½ pint water
2tsp orange juice.
This is what you do:
• Soak the fruit in the liquid overnight.
• Add the dry ingredients.
• Bake in a 2lb loaf tin for approx 1½ hours
at 160C covering for the last ½ hour.
Then eat it !0 -
Would it not be easier to nip to the local shop for eggs and bake a tried and tested favourite recipe?0

Even if you buy value eggs they still work out one of the most expensive items in a cake0

It's not about money......it's about laziness! Actually, it was quicker to throw Thriftlady's cake together than to pop round to the shops. Should be out of the oven any minute now :-)0
