just seen this thread - I never bake with eggs or dairy, and our usual cakes include choc, banana, iced ginger, sticky ginger, apple/sultana, lemon maderia - all the usual favs - can I help with any particular recipes or did you go shopping already :-) ???

Bananas? Especially ones that are going a bit black and sticky, they'd make a cake stick together nicely.

been having terrible trouble baking a cake without eggs. have tried a banana cake, but was just gooey and sticky...
we've tried the orgran egg replacer to no avail. my friend has had good results with muffins, cake mix and egg replacer, when i try a big cake in a big tin, ive got rise, as it completely covers my oven in cake mix, but it either isnt cooked at all after and hr of baking, or it has hollowed out like a doughnut... im looking to make an iced engagement cake, like i would bake a normal cake and ice, but i need a deep cake, is it acheiveable?0 -
I do all my baking without eggs, and with soy milk - we have severe allergies - and don't have a problem. What sort of cake would you like to make and ice? let me know, i'll probably have a recipe. A good banana cake recipe is:
2 oz marg, 2 bananas, 5 0z sugar, 8 oz self raising flour - either white or brown. Mash bananas, cream in marg and sugar, add flour and mix with milk - you need about quarter of a pint - keep it quite stiff. Bake in a loaf tin at 180 degrees - lovely and very reliable.

im really after either choc or plain vanilla, gonna try thriftladies cake recipe.. the person who wants the cake has just made a nice looking one with egg replacer, but is a cake mix from costco, but she has sandwiched 2 cakes together, i make cakes all the time, using deep tins, im not sure if thats where my problem is... the trouble with separate sandwiched cakes, is when iced you see the filling worse than on a deep cut cake...0 -
Probably a bit late but I love Delia's banana and chocolate chip slice which is made without eggs. I use my brown bananas for this!!! I often make it without the topping and eat it warm with ice cream.

I've made this diary and egg free recipe many times and it's delicious. I thought it was going to be a disaster the first time I made it, it seemed a vey dry mix until I'd given it a good beating! It's a bit more moist than a standard cake, but not as gooey as proper brownies. I never add the nuts.

Most recepes with eggs an dairy can easily be adapted. Milk can easily be replaced with Soya or almond milk, butter with Vegan Margarine (vitalite or Stork in the gold packets. Stork in the tubs strangely has buttermilk in). As for eggs experimentation is the best way. I use a mixture of egg replacer, Bananas, Apple sauce or soya flower and Xanthum gum. I have yet to find a recipe I have been unable to adapt satisfactorily with one of these methods. It occasionally takes a couple of goes to find the best method.
Once you have found the best method it normally just shows that eggs aren't really needed. My non vegan friends are normally so surprised and they are the sort of friends that if it was noticeable would take great joy in telling me such.'The More I know about people the Better I like my Dog'
