    Talking about chocolate!

    Low carb hot chocolate: in a cup put a good dollop of double or clotted cream and break into it a couple of squares of very dark chocolate - I used 85% cocoa. Sprinkle on some cinnamon and then microwave for 20 seconds. Mix into a paste. Slowly add some milk, whilst stirring until the cup is 3/4 full. Microwave again for a minute or until hot enough to drink.

    Whoah! hadn't tried this before I posted. I used 2 squares of Lindt 85%, a teaspoon of clotted cream, a good splash of d.cream and then finished with whole milk (I also added some vanilla extract with the cinnamon). It was in a small mug, 3/4 filled, and I only just managed to polish it off, it's really rich and really chocolatey - if you want an indulgent hot choc hit.

    (PS this isn't normal for me at 2 in the afternoon!! but I'm poorly and really needed a treat :( )

    murphy, that low-carb hot chocolate sounds obscenely & mouth-wateringly gorgeous!! :T Most definitely on my 'to try' list, thank you so much for posting :D I'm actually sat here umming & ahhhing whether to try it now with the soya milk as that's all I've got, worried it might curdle though _pale_ Will get my lunch down first & then decide ;)

    lindens, we don't have a Waitrose around here, I was hoping the soup was going to be another brand. Oh well, I've made some HM soup so that will keep me going for a while, thanks anyway.

    Have been to Aldi to replenish my double cream supply & the dark choc hazelnut fell into my trolley as well :whistle: Wonder what that would be like crushed & made into hot chocolate :think:

    Off to sort this pork fillet thing out now. I bought an 'oven ready pork eye loin joint (no, I don't know what one of them is either!!) in Aldi so I'm going to shove that in the oven at the same time. The Aldi one already has a red & green pepper coating & I'm going to put some herbs & stuff (maybe garlic??) on the other one.
  • Sorry murphy, missed the bit where you said you were poorly, hope you feel better soon, I'm sure that hot chocolate would have helped loads, it's made me perk up just thinking about it :D

    I came across these 2 recipes, which I've just tried. Apologies if they have mentioned before.


    Mince & Mushroom bake

    minced meat
    tomato sauce / tomato paste/chopped tomatoes
    onion, garlic
    large mushrooms, sliced
    cheese slices or grated cheese
    butter
    cream
    spices/mixed herbs/italian seasoning/stock cube
    salt, freshly ground pepper, optional tbsp finely chopped capers, Worcester sauce
    a totally unscietific recipe use any amounts you like

    First make the sauce, fry chopped onion add garlic, add mince,fry till browned, add stock cube, tomato and spices and capers/Worcestershire sauce if using, season with salt and freshly ground pepper, you want a fairly dry sauce, not too much liquid.
    Grease an ovenproof dish, place a layer of sliced mushrooms at the bottom of the dish, then a layer of mince, a layer of cheese, and so on > layer of mushrooms > layer of mince > layer of cheese.

    Finish with a layer of cheese, pour over the cream, bake in the oven at 225degrees until the cheese is golden brown and bubbling.

    However, I used 250g mince, 1x med tomato (100g), 1/2 med onion (100g) 3 large mushrooms (185g), celery x2 sticks, garlic x 2, mature cheddar 70g thin slices. S & P and a dash of worcester sauce. In my pyrex bowl (with lid) I got 2 layers, didn't use any stock as the mushrooms released their own juices (didn't use the cream) cooked for approx 45 mins @ 150 deg. I had just over 1/2 with 100g broccoli and I only just managed to eat it all. 15g carbs including the broccoli, for 1/2. Rich and tasty (although the type of cheese will make a difference).

    CHEESE STRAWS Lowcarb version

    60g parmesan, finely grated
    60g grated almonds
    45g cold butter diced
    salt and freshly ground pepper
    you can add 2 tablespoons fresh chopped rosemary, or caraway seeds, or paprika powder, or chilli powder or freshly ground black pepper, whatever you fancy
    Preheat oven to 200 degrees
    Mix all ingredients together quickly, shape into q dough ball, leave for 30 mins in the fridge to cool.
    Then roll out dough to about 1 / 4 inch thickness and cut out with cookie cutter or with a knife to cut strips/straws.
    Bake in the oven at 200 degrees for 15 minutes.

    I tried the rosemary version, but with 1/2 the ingredients just to see what they were like (made 8 short straws). They sort of spread in the oven so I think I used slightly too much butter, if I can get it right they would be good for a drinks/nibbles/buffet-type spread with a glass of red. Hardly any carbs.

    Hi guys , havent been here in a long time, but started the Dukan diet 9 days ago and have lost 6lb so far :j.
    Last year I was on the Atkins diet, but I didnt loose much weigh on it.
    Since then I found out I have an underactive thyroid and have started treatment, So weight loss here I come ;).

    One thing that concerns me is getting through xmas without gaining any weight , so today I ordered some choco perfection chocolate
    online.I Cant wait to try it (its really expensive at over £3 per bar) because its gentle on the digestive track and has no nasty sweetners and its no carb .

    mirry personally i plan to take xmas day and boxing day off as i'll be eating with various family and want to relax (aka gorge on chocs, cheese and roast potatoes!). I'll go back to LC on the 27th and do three days of exercising on an empty stomach and eating 20g carbs and 70% calories from fat. Before I started I read a lot on getting back into ketosis and that was the overall best way to get glycogen out of the muscles and get into ketosis after a day or two of lots of carbs. I think dukan is low fat so you could just have a day off and exercise on an empty stomach for a few days?


    pinkprincess i call that cheesy egg cauliflower "cauliflower brains", it's a czech dish i believe and so yummy!!

    lindens what about some chunks of chicken, cauli, peas and baby corn in a thin sauce made from chicken stock, coconut milk and some green thai curry paste? I've made a quick thai chicken stew that way so think it would work to make a soup with more liquid.

    murphy the cheese straws sound tasty, must add them to my ever growing list of things to make :D Along with nuts dipped in some of that 100% chocolate.

    Hello everyone! I'm just eating a little bit of mega fat chocolate mousse: double cream whipped with cocoa powder. I have double cream to add to coffee and sauces to increase my fat intake but the last bit in the tub had gone really thick and was just making funky ribbons in my coffee so I couldn't resist making some mousse!!!
    I was a bit late leaving the house morning so breakfast was a lump of edam smeared in chicken liver pate munched on the go :rotfl:

    Hi there. Can I ask where you bought it from - quick look brings up only US websites and I'm keen to try this. Erythritol is one of the sweeteners I use in cooking and - to me - its definitely better tasting than several others, is fine when heated, and doesn't bring on the windy factor like some other 'ol's

    Thanks for the advice - never made any Thai food so wouldnt have known where to start. Will try that at the weekend.

    Know almost nothing about Dukan but peas/sweetcorn are too high in carbs for those doing Atkins.

    Morning, another bad day yesterday, i'm carp when i'm at home, but have been up early to get a loaf going,
    Brekkie will be two poached eggs on two pieces of buttery toast :)

    That soup did sound delish but alas, no Waitrose for miles :(

    I'm waay to scared to weigh, will wait two days until i wee out two gallons of water.. :D
