    A good alternative to rice is cooked then crushed cauli. Trust me. If you just boil up the frozen stuff then drain and mash it. Makes a surprising replacement. I was very skeptical until I tried it. You really can't taste it as cauli - but you do have to drain it well. I generally dry fry it for a little while, just to get rid of moisture.

    I use it as a base for my low carb curries which I make in batches for work lunches.

    Cauliflower rice is great - I grate a raw one and then microwave it in a tub with the lid loosely on for about five minutes. I also really skeptical but it works really well.

    Can I join you again. I made a few posts in this thread a while back but didn't stick to it. I'm now loads heavier and after some research have come to the conclusion that low carb is surely the way to go. I just can't decide between a low carb and low fat diet or low carnb high fat like atkins... Which do you do and how are your results? Any input would be appreciated.

  • This is great mercy and chica, I use cauliflower a lot in my cooking but I have never thought of cooking as a replacement for rice! I am definitely going to try this and hopefully not miss my big helping of rice too much. It is great to have so many new ideas on these forums, I think my dieting will benefit from it!!
  • Had no idea that cutting out the carbs could make me feel much healthier. Took a little while to get used but I'm determined to stick to this celeb slim so need to do it properly and I'm really not missing my massive plates of pasta, realise I was eating way too much before.

    Just an update on the cauliflower. I made califlower mash just now and it's heavenly. I just boiled it until soft, drained and mased up with a potato masher and a knob of butter. Immense served with steak and mushrooms!

  • Hi crazystace, I agree that it takes a little while but I'm sure we all eat way too many carbs in the first place so it's just the body adjusting to it. I've lost 3lbs in the last week on celebrity slim and I feel healthy and full up which was my main worry. I love the cauliflower idea, going to try it for dinner tomorrow night.

  • OMG where has cauliflower rice been all my life! This is gonna help my CS diet no end. I cooked it last night and the kids barely noticed and gobbled down the lot.
  • Forgot to say, tried out the Jamie Oliver fish bake the other night, but without the potatoes on the side. It was real good, give it a go!

    Lost focus and concentration a few months ago. It didn't help that DH is now home most of the time and is severely disapproving if he sees me eat something like bacon and egg.

    Presumably shovelling at least four pieces of toast and butter or sugary cereal down me and then feeling starving hungry for a few hours before making a couple of sandwiches that don't fill me up for lunch is healthier:mad:

    I had bacon omelet yesterday morning and that kept me happy and not obsessing about food for most of the day. Made lemon and herb chicken with lots of green veg and roast potatoes (I had a tiny roast potato) for tea. Lunch was cheese on tiny bits of melba toast.

    Have ordered a few low carb books from amazon to keep me focused and remind me why I want to get back to lc ing. It is not so much losing weight although I could do with losing (cough, mumble 2 or three stone - or more) but that I am sick and fed up of being hungry and miserable and have realised the more carbs I eat , the more hungry and miserable I get.

    Went to get thyroid meds checked and am now on 125 a day - got weighed and am nearly a stone less than 18 months ago but don't want to pile more weight back.
