I went to my local library and borrowed every book on low carb to look for meal ideas (not all at once) and got loads of ideas from this thread. Just get into a routine and you'll be fine. I lost 2 stone before Christmas but have only lost a couple of pounds since but think I am overdoing it on the salted peanuts which can be as bad as sugar. Going to try and cut them down. Had a really bad week at work and normally would have been binging all week on anything in the house but haven't done that. As long as I don't put on any weight will keep going as long as I can. Absolute must is my cauliflower cheese with my dinner and I'm happy.
I love peanuts, but don't think I can have them on the atkins can I? :A
Do you know, I am so happy you mentioned cauliflower cheese, we love it in our house... argh.. just thought, there's flour in the recipe I use!! damn! do you make it without the flour then?
Someone mentioned cauliflower mash.. that sounds promising too.:T0 -

I haven't eaten any carbs since Monday as I have just been diagnosed with diabetes a week ago and already I have got my blood sugar levels down to a normal level with the help of diet and medication. So far no nasty side effects, I certainly don't feel tired or hungry. Obviously I am very motivated health wise as opposed to just simple weight loss, but I shall enjoy keeping tabs on this thread to see how people are getting on and the little tricks that they are using to get through the day.
Hi Jim, I am on week 18 and have lost about 3 stone.
If you like a drink , then its white wine, red wine or maybe a vodka and diet coke.
The best thing for main meals to bulk them out is whizzed up cauli , its just like mashed potato in some ways , just boil it to death and wizz it. Then you can add all sorts of things to make it interesting.
I enjoy a grilled chicken fillet , with green beans, broccoli and cauli mash with gravy.
Dont go down the processed meat with cheese and cream route , thats old hat and not healthy.
quarn sausages with scrambled eggs for breakfast are a better option than processed sausage, add a tomato and some mushrooms and its a cooked breakfast!
good luck with your new regime!0 -

coleslaw for me at lunchtime, with cold meat and lettuce, maybe avocado and favourite of all a small tin of pilchards, yum.0 -

Sorry to hear about the diabetes diagnosis, that's something in the back of my mind & one reason I'm doing low-carb, I don't want to end up on medication if I can help it.
I have a big thread going on the debt free wannabe-

which I imagine many have come across previously.
If you have any concerns regarding your health see a Dr. I held of for a couple of weeks but the NHS has been brilliant and while they have not told me to go and loose weight they did say that if there is "less of me" it would be easier.I am like,"say no more" and will do it.0 -

I love grilled chicken with green beans, broccoli and cauliflower. Are you suggesting that I boil the cauliflower to death and then do what with it? mash it?0 -

For me, i like a bit of bulk with a meal , you cant have potato mash because of the effect on insuline because of the high carbs, so you look at an alternative.
If you boil cauli , and then mash it , then it becomes a tasteless mash , much like mashed potato .
You can then add some sliced spring onions to make a "champ"
I like to fry mushrooms , sliced leek , some mustard seeds in olive oil , then wizz the cauli , then add them in with salt and pepper.
Its just a different way of eating and substituting things that have a high effect on insulin for others that dont0 -
Sweet, is my middle boy, was the youngest in the tux.
I thought mercy would like it too.
Diamonds, its LC- ing, not icing
I make my cheese sauce by melting cheese in double cream, very rich though.
Fruity, its a lot like like real bread, unfortunately the site is still down.
I have enjoyed the flaxbread too, very quick, and great for a bacon sarnie.
Here is a link for flaxbread, i used the microwave recipe myself, not sure where that is, thought it was on the recipe page.

Caulimash is good but I preferred to grate it and stir fry it in butter with salt and pepper, this is really messy to grate but taste really good as a base for a curry or strognanoff. Also cooked cauli, ham, gherkins and hard boiled eggs all chopped together in mayonaise makes a sort of German style 'unpotato' salad - stinks mind, when you open your lunch box at work - I was banned from bringing it in LOL!
I don't low-carb at the moment cos I'm doing Cambridge (too impatient to get the weight off) but I will be back on it to maintain. I first low-carbed back in 2002 and have lots of favourite recipes. Have a google for 'Linda's Low Carb menus and recipes' (I'm not allowed to post the link unfortunately as I'm a new user) it's American but loads of recipe ideas on there that can be adapted.
Have you tried the instant bread recipe? It cooks in the microwave and I used to make it in a tupperware oblong tub about 6" x 4" it makes reasonable bread alternative that can be used for small sandwiches. I think its about 8 carbs in total.
100g ground almonds
25g melted butter
2 eggs
1/2 teaspoon baking powder.
Mix wet ingredients, then add the dry. Microwave for 2 mins until risen and dry on top, it should shrink away from the sides so shouldn't have any trouble tipping it out. you can add other things to it to make it either savoury (herbs/cheese/garlic butter or sweet (splenda and vanilla/cocoa/coffee maybe)

No, its off the net, google coconoil.
I think you can get cheap stuff from ethnic shops but coconoil is organic and what most peeps here use.0
