    Hi everyone - today I'm having yoghurt, eggs/cheese and chops with veg. I've had a really stressie week and desperately wanted a drink yesterday but I didn't give in and am so pleased because I have lost another 1lb, not much but I'm getting there.

    Morning people - got back late Thursday night and spent yesterday picking up and dealing with the hundreds of emails waiting for me. Now doing my Time Team act whilst drinking green tea.

    Was OK in the hotel until some colleagues arrived... :o

    Today I've had bacon and eggs for breakfast
    Lunch will be some gammon ~(boiled a piece yesterday) with salady stuff
    Evening meal will be BNS soup which I remembered to take out of the freezer last night

    I'm so sorry to hear your news Daisy and hope that your husband's recovery is full and swift.

    Water - I need water!

    daisy, so glad hubby had a good day yesterday, hopefully lots more of them to come. Hope you & family doing ok. XX

    My menu for today:
    B - piggies in blankets (not sure how many yet)
    L - 2 low-carb crispbreads with butter & cheese, BNS soup
    D - coriander & lime chicken with cauli mash, dwarf beans & creamy mushroom sauce

    Didn't reckon much to the lemon sole yesterday, tasted 'wet' & the dusting/batter stuff was soggy, not worth the extra carbs. Usually love lemon sole but this one was a disappointment.

    Making my BNS soup today, roasted it last night when making dinner, tis only a little one, got it from Co-op for 75p as couldn't get to Aldi this week.

    Must go & buy more crispbreads today, I'm onto my last 2!! Don't usually let myself get that low on them but haven't been able to get to H&B either.

    Right, off to make my piggies, see you later.

    I cheated on the gammon joint yesterday as bought a ready-made one from the Co-op for £4 :o Only small but it looks nice.
    Their 'raw' ones are half-price (£5) atm, but didn't think they looked that good, hence why I bought the ready-done one. Excuses, excuses ...

    Three weeks and 1 day! Fly on Sunday 14 Feb. Got my new suitcase; bought 8 new cotton tops yesterday (:o ); sorted my toiletries bag out; got my ETA (visa) yesterday too and generally getting organised. Have decided to travel light and not lumber myself with stuff I won't wear as I normally do! It's high summer there and clothes will wash and dry very easily.

    I expect that ready cooked ones will be a tad juicer than my boiled ones, I like having the ham stock for soup making as it adds an extra taste dimension that a stock cube can't. However, glad it works for you. Have had the Co-op ones before when on holiday and they are nice.

    Have to shower yet... :eek:

    Hmm, yes, how could I have forgotten that the whole point in buying a whole gammon joint & cooking it oneself was to get the stock!! :doh::o:rotfl:
    Anyway, the Co-op ready-cooked ham joint was awful, won't be getting that again!!
    Btw, I read on that gammon thread you linked to that it's a good idea to leave the joint to cool in the juice it was cooked in, keeps it moist apparently.

    Sweet I only ever do gammon in the slow cooker. It's totally idiot proof - even for me lol. All I do is put a cup or two of water in - enough to cover the base of the crock - stick the gammon in and cook it for around 8 hours on high or about half that time on low. The great thing about slow cookers is they are so forgiving, the low cooking temperature gives a pretty wide margin for error. Good for scatty peeps such as myself:D

    I too read about leaving it to cool in the cooking juices, but it seems to come out good whatever you do to it, tbh. I also buy the "bacon joints" and do those the same way, because they are usually a bit cheaper than the "gammon joints" and maybe more of a 'rustic' texture than gammon has, but still really lovely flavour.

    We just had turkey steaks done on the Foreman with some green veg... which was yum, but I'm still hungry... hmm

    And while I'm here - is it me - or have some of the smilies disappeared? Where is the roll eyes one, and the shrug shoulders one? See - I want to put them in now, and I can't lol :rotfl:

    Benfilan Its a while since I've read the Atkins but I'm pretty sure alcohol is not allowed this early. Think you maybe need to increase the size of your breakfast as one egg might not be enough to last you to lunch and that is what makes you look for snacks. Once you get used to Atkins it's not that bad. A bit boring but certainly filling enough.

    Thats the thing, its been a week now and I am so bored! I've decided to forget the super strict atkins method and just stick to very low carb for a couple of weeks and then be a bit more relaxed about it.

    Morning LCers.

    Got loads to do today - top of the list is complete my online tax return but I always struggle with it :mad: got a massive form to reformat; got another form to design (hate forms and so have put these off long enough) and other bits and pieces. Inbetween will go for a walk down town, think I'll have a shuftie through Lakeland on the pretext of needing some shower cleaner!

    Food today:
    breakfast: bacon and eggs probably
    Lunch: some sort of salady thing
    Evening meal: BNS soup with gammon in

    I will attempt loads of water, avoid alcohol and get going with the green tea :A

    How much actually works is up for debate - got to keep in mind my Yoda quote from the other week.

    Good morning peeps

    Just had drama in the sweets household. When hubby let the stray cat in, the little $wine (the cat) had a bird in his mouth which, thankfully, escaped but was then scuttling around our lounge & hiding under the settees & TV unit!! Hubby eventually cornered it & managed to get it outside, poor little thing. Could have done without that when I was having a Sunday morning lie-in!!

    Anyway, my menu for today:
    B - 2 egg cheese & mushroom omelette??
    L - 2 low-carb crispbreads, garlic sausage, BNS soup
    D - lime & coriander chicken, cauli mash, dwarf beans, cheesy leeks

    Forgot to get the chicken out of the freezer yesterday so had the ham joint (yuk) instead.

    Didn't have BNS soup yesterday either as I was out all afternoon & didn't finish making it, just needs blending so will do that this morning & then freeze into portions.

    Hope everyone doing ok this weekend.
