  • Morning all :hello:

    Just had a scary moment in the kitchen - cooking sausages under the grill & it set on fire because there was old fat in the grill pan!! :o Just heard a whoosh!! Had a bit of a panic but most of the flames went out of their own accord & I just had to tackle a persistant one!! Kitchen stinks now & there's a bit of smoke damage to the front of the oven - serves me right for being a minger & not washing my grill pan!! :o Tis soaking in boiling water & Fairy as I type!!

    Menu for today

    B - 2 x boiled eggs & 2 x sausages (finished off in the frying pan :rolleyes:)
    L - 2 x crispbreads with butter & cheese, garlic sausage, lettuce
    D - chilli (from freezer) & cauli mash

    mazzers, I managed to get some frozen fish in parsley/butter sauce yesterday - half price in the Co-op :D

    Staying in today as DD2 is off poorly, she had her HPV vaccination yesterday (as did DD1) but woke up at 5am this morning feeling sick with a stuffy headache so keeping her off. DD1 fine apart from a painful achey arm. :(

    Anyway, have a good day everyone, tis sunny but chilly again here :wave:
  • why is it that when both partners work full time its the wife that ends up doing the housework too?? Grrrrr. Now my OH is generally lovely but seems to have dust blinkers.

    Anyhoo, enough moaning (for now)...

    Gaye -it was so sunny in Germany too, I wore shorts and T-shirt! (well cropped trousers but that's as close to shorts as I ever get).
    Sarah - When I say fruit I generally mean berries coz they are lower in carbs. I'm following low GI more than LC at the mo coz I was struggling. I don't eat meat so I allow myself to be a little more relaxed so I get my full vitamin/mineral content from food.

    Hi peeps :wave:

    just popping in to say hello really, had a carp day yesterday and i ended up with a curry for tea, food so far today - nowt!

    I have flu and feel horrible but not hungry at all, i know that i need to eat but just can`t seem to force anything else down atm.

    If i can muster up the energy later i shall make a flamin hot curry, it`s about the only thing that i can taste and the heat should do me good.

    Hope you are all doing well!

    Fingers crossed i`ll be back to normal soon.

    Sunnyday -Sorry you are feeling so poorly.

    Brekkie: yoghurt
    Lunch: giant portion of quorn chili (no rice) topped with cheese. couple of satsumas (can't help it, they're just sooooo scrummy)
    Dinner: probably omelette.

    weight isn't dropping but isn't climbing so could be worse.

    Ah well, lc went out the window again :o

    Have been for a jaunt with a friend and just knew we'd end up having lunch somewhere.

    Had great bargains on bedding in the sale at Matalan, all designer stuff too icon7.gif
    So tomorrow i will be painting the spare room and lcing like crazy :rolleyes:
    It really is time to knuckle down, xmas is just around the corner, i've said that before..... i know :rolleyes:

    Is great to get out and about, i've been really down stuck in the house.

    Going to round the day off with a bottle of wine, and then try really hard tomorrow to get some of my resolve back!!

    right then guys - here it is:

    Low Carb Brownies
    Makes about 48

    1 cup ground almonds, well sifted (most supermarkets do ground almonds)
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1-3/4 cups Splenda or granulated Maltitol etc
    1 cup unsalted butter
    4 ounces unsweetened baking chocolate (or good quality dark choc), chopped
    2 teaspoons vanilla essence
    4 extra large eggs, beaten
    1 cup chopped pecans

    Preheat oven to 350 F. Butter a 9" x 13" cake pan. Stir together almonds, baking powder, salt and Splenda; set aside. In a microwave bowl, on high, melt the butter and the chocolate, stirring frequently. Add the Splenda, the beaten eggs and vanilla; beat until well blended. Stir in the dry mixture, mix well, then stir in the pecans. Pour into the prepared pan, spread evenly. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Check at 15 minutes. Do not overbake. Cool on wire rack, cut into 48 squares.

    Note: 1.8 net carbs per square



    got some in the oven now!!!!!


    UPDATE!!!!!! tastes really nice!! mine is a lot like a lovely moist nut cake (I used the milk cooking chocolate as it was lower in carbs than the plain cooking choc!) but I think using the plain would be lovely and rich!!!!!! I can taste the chocolate in the brownie/cake and its really nice - definately making it again!!!

    I have also seen one for peanut butter cookies which is
    cup of peanut butter,
    cup of sugar substitute,
    teaspoon of vanilla
    an egg
    blend it all together and put blobs on a baking tray (don’t forget to flatten to cookie size) and bake for 10-15 minutes!!

    aparantly the carb count is the amount of peanut butter (carb count on back of jar as they vary) divided by the amount of cookies made!!




    today has been
    mini pepperami for breakfast
    tin of sardines for lunch plus 2 mini pepperamis and 2 peices of v.dark choc
    tea will be steak with cauli and broccoli and a couple of brownies if they turn out ok - god they smell good!!!

    Been doing really well on not drinking for the sake of it, all i gotta do now is stop eating for the sake of it!!

    good gal mazzers - though same cant be said for me! just cracked open a bottle of red!

    Im quite looking forward to making some peanut butter cookies - my sainsbury's basic is 12 carbs per 100g (jar of 340g). it was also the lowest I could find in the shop when I bought it - I dont have enough at the mo to do cookies and I used the last of my butter on my lurvly brownies! but if I remember rightly tescos value peanut butter is lower than that!
    my guestimate is going to be that the recipe will make about 15 cookies making them less than 1 carb each (depending on size if cookies!!!)

    I hope they taste like the biscuits I got taught to make at junior school - cant remember what was in them but I remember the lovely buttery, nutty taste!!!!


    you know whats really odd?! - before I was low carbing I never used to like cauli but now I quite enjoy it! I dont know if its because Im not smothering it in gravy or just because Im doing different things like making a pizza base but its quite nice!!
    Im also starting to go off curry - I never thought I would say that!! got 2 portions in the fridge!

    tomorrow night I am going to treat myself to chiken kebab meat from chippy and going to beg with them to let me have salad instead of chips!!!
