I didnt get a chance to make the mex fudge, I was way too busy over the wekend, finally went on the cycle ride yesterday. It was an absolutely gorgeous evening in Glasgow so we were out for several hours !!!! It was kinda scary at first, Ive not cycled for years and Im too afeared to cycle on the roads so wheeled the bike to the park
OH had a voucher for "Ketchup" a burger place, so went there last night, I had the Burger wrapped in lettuce, it was very tasty and the coleslaw side was very creamy, ( pinched 2 of his homemade fries.........just to taste) but felt really guilty after
I bought a jar of coconut oil too, the cheap one I think it is, but am wary of taking too much in case it aggravates this blinkin gall bladder. Ive just had a cup of coffee and put in about half a teaspoon,hmmman aquired taste I think, hopefully I'll be ok. Ive run out of beetroot juice which I usually take when I get twinges so hopefully I'll be fine

When i'm being good i am way underestimating my calories, now i know we dont count calories, but i have only had 847 today, just not enough.
I will have to go hunting and gathering later :rolleyes:
My fat consumption is high though, i'm realy getting a taste for it0 -

Well, the cannelloni ended up delicious, made with blanched cabbage leaves instead of pasta. Not quite the same texture, but lovely all the same.
Fry some chopped red onion till soft, add minced beef and crushed garlic and cook. Add chopped mushrooms, passata, a glug of red wine, a squeeze of tomato puree and some fresh basil and oregano. Pop a lid on the pan and simmer.
Meanwhile, cook some white or green cabbage whole leaves in boiling water till soft, drain. Roll up spoonfuls of the meat filling in the cabbage leaves and place in an ovenproof dish. Make a low carb cheese sauce* and pour over the "cannelloni", top with some grated cheese and pop into the oven till the cheese is melted and bubbling.
*There are several recipes for low carb cheese sauce, I'm still experimenting to find the best one.

has anyone tried that baked custard recipe? did you use waterdown double cream ? im not sure what exactly half and half is. also the recipe says 1 teasp of vanilla, but is this vanilla essence?0 -
i made baked custard - not sure which one but it was rotten - wasnt enough egg yolk to bind it
then i think tinkerbell posted a different custard reciepie and that was lovely
for my cheese sauce i use a tub of creme friache warmed up then whatever cheese i have - dollop of cream cheese and handful of grated or whatever
i find using double cream for cheese sauce a bit to rich and claggy:j MFi3 wannabee :j
