Hiya gang! Whoa! Where is everyone?!
I’m still here, been lurking but didn’t want to post as it all went a bit wrong… I was doing really well but then totally lost my appetite so the rule of not going more than 6 hours without eating went out the window (and led to being ravenous & eating bad stuff). I’ve also come to realise that anything wheaty or yeasty has HORRIBLE effects on me (paaaaaaaarp!).
I cooked a chicken chasseur (chicken thighs & drumsticks, mushrooms & some onion with a Coleman’s mix). I figured the mix wouldn’t be too bad as it was 26.3g carbs for several meals. How wrong was I?! Oh, the pain! Then I spent a few days scoffing hummus & pitta bread which didn’t help matters. Laziness & stupidity = bloated & gaining weight again.
So, new month new start. I have 2 events approaching that I have targets for so I’m hoping to stay on track & see results. Although I’m still having trouble eating first thing – still not had anything yet due to faffing mainly. MUST BE MORE ORGANISED!!! I keep forgetting to defrost stuff overnight, if I could remember to do that I’d be fine! Who can resist bacon for breakfast? (Except Marrow & t’other veggies!) Seems daft not to be eating!0 -
After a few days off-piste & scoffing hummus I thought I should post this recipe – If I hadn’t been so lazy I could have avoided a lot of discomfort!
Baba Ganoush
Love hummus? You’ll love this more! It’s basically the same recipe but substituting the chick peas for roasted aubergine – and it tastes better too!
Considering that chick peas are approx 16g carbs (per 100g) and aubergine is only 2.2g carbs (per 100g) it’s an excellent alternative.
Ingredients –
2 aubergines
Tahini
Lemon
Garlic
Method –
P rick the aubergines & bake in the oven until soft OR cook over a flame until the skin is completely charred (this adds a smoky flavour).
Leave the aubergine to cool then cut in half and scoop out the soft flesh.
Put the flesh into a food processor / blender.
Add crushed garlic (1 or 2 cloves depending on your taste)
Add approx 2 tablespoons of tahini
Add the juice of half a large lemon
Whizz in the food processor
Taste to see if you would prefer more garlic / tahini / lemon juice.
Serve as you would hummus. (Which is a slight problem as I’d usually have it with pitta bread)

Yet another gorgeous day today, yippee!! :j Does put me in a good mood [STRIKE]for a change[/STRIKE].
Have done a few days worth of meal planning & buying so fingers crossed I will be sticking to budget this week - won't post the meals though as not all strictly low-carb- possibly more low-GI actually
which is something I'm considering trying (again)
I love hummus, zero, and have always fancied making my own so might give that a try, if budget allows. If I do decide to go low-gi then a wholemeal pitta with it would be absolutely fine for me!! I suppose to keep it low-carb you could eat it with veggie sticks eg. courgette, celery??

Having a really baaaaad day today. Got woken up by OH screaming that he had run over our cat Gem!!!:eek: Had to rush her to the vets, but fortunately they don't think anything is broken, although she has some torn ligaments in her knee. OH ran right over her, she must be made of rubber! So pleased she is ok. She's just come home but is ignoring me coz she had to have xrays and anaesthetic, and can't go outside til her leg is healed. OH is now in the doghouse -in fact i fed his tuna to her!:D
So, foodwise not been great today. Had a banana but otherwise nada.
Going to try Zero's hummous sometime though, sounds scrummy, although it makes me quite antisocial with all the garlic. At least it keeps away vampires......although if all vampires looked like that chappie in Twilight I wouldn't mind. (bit young for me though, shame)

Sweet, i started my budget, withdrew £70, spent £40 in Tesco and Lidl, and intend to make it last til next Monday.
My new motto is WIGIG (when its gone its gone) and even the boys agree with me, as they were shocked that i spend £400 a month on groceries.
I need to sort out the freezer and use up whats in there as its jam packed, and am not buying 'special offers' anymore unless its on my list as its unecessary spending and usually sits in the freezer unused.0
