    Thanks for the cat pics Mercy, they are beautiful! Looks like you'll have your hands full :D

    Finding my appetite completely dropping off again at the moment, really didn't want any tea at all but figured I was better to make myself have something, rather than get starving at bed time or in the morning.


    Got my root canal tomorrow afternoon which I am completely dreading; going to make sure I have a substantial lunch in case I'm not up to eating afterwards. Also have some soup made up ready in case I need easy to eat things afterwards!

    Hi all, sorry I haven't been on here for a while. Have been trying to get into my low carb diet and doing well I think. Trying to keep between 50g-100g carbs each day but normally sit around 60g-80g which seems right for me and staves off the need for any carb binges.

    I have found that lower carbs have really helped to settle my IBS. I haven't drunk alcohol since 27th December 2012 so that has improved things too.

    I used myplate.com to track my eating and that is definitely helping me keep track of my carb intake.

    I LOVE Lindt 90% dark chocolate :p The first time I tried it though, it felt like all the moisture was being sucked out of my mouth, very weird feeling! But after the first couple of squares I love it. And I only need to eat 2 squares to feel satisfied.

    I have lost 2 inches on my waist so far which means I now actually have a waist lol. Not sure how much more I can lose off it, perhaps 1-1.5 more inches. I will just see how things go.

    Been reading through the recipes, thanks for these, they have given me some inspiration to cook new things :D

    boots_babe - I hope that the root canal treatment goes well. I have had a few in my time and they are a bit uncomfortable but not so bad

    Mercy - if you tried the coconut muffin recipe with chocolate please let us know how it went?

    Does anyone know of a good low-carb recipe for hot chocolate (other than melting a whole bar down and drinking it? lol).

    Hot chocolate is my vice I'm afraid. I have a couple of those Options Indulgence ones (one in morning and one in evening) which are 60 calories and 8g carbs (think 6.8g sugars) each.

    Should I feel bad?? Can anyone suggest any alternatives, other than not having hot chocolate ever again lol :o

    Try 1tsp raw cacao powder, 1/2tsp cinnamon powder, 1 tsp honey in a mug of freshly boiled water - approx 35 calories and 4.9g carbs (4g sugars). Perfect for beating those carb cravings too :)

    I use Green & Blacks cocoa powder - 1tsp, half water / half cream and tsp sucralose which comes to around 4 carbs per mug.

    Green & Blacks cocoa tastes really like chocolate :)

    Chameleon yours sounds tasty too, must try it.

  • On the cocoa/chocolate theme, and inspired by Mercy making coconut muffins (I'll save them for the weekend :D) I went through the menu list and was curious about the 'mocolate danish' expecting a danish pastry type thing. Ooooo no, much better; think chocolate fondant :D

    Absolutely delish :D, so quick and easy. If you want a real pudding-type treat, and you've got cocoa and cream cheese in the cupboard - no doubt you've all got ground almonds! - you are on your way. I'm impressed just how good it really [STRIKE]is[/STRIKE] was :o

    I made a first draft but it needs more work. Some workmates showed an interest in trying the coconut muffin so I made 1.5 the recipe, loaded half into muffin cases and experimented with the rest. It's not quite sweet enough and maybe missing something. I'll experiment some more and get back soon :D

    We have a massive resource in the recipe list, it's easy to forget quite what's there. Thanks to everyone asking about desserts - it's very refreshing :rotfl:
