    Has he changed anything in the past week? I put on quickly if I eat over my allowance, even just once or twice is enough :D

    daska - you have done so well and thanks for the info on cholesterol

    I always make my pancakes with water and fry them in a little olive oil. I sprinkle with splenda and have with cream and a few raspberries. I have also tried with lemon and chocolate melted with cream and spread on. Unfortunately chocolate is not on the menu at the moment but I did have a small handful of nuts today with half a tsp almond butter. Very nice combination.

    Breakfast - 2 eggs, one Black Farmer sausage and very small low carb celeriac / cabbage patty

    Lunch (out) - seabass with spinach, baby tomatoes and mushrooms in a butter and white wine sauce. I left the potatoes.

    Dinner - 2 almond pancakes with 12 raspberries and cream

    snack - nuts as above / low sugar jelly with cream

    That's partly why I was going to wait a little while before bothering to get restested, as I've been reading the book that was recommended and it did indicate a possible initial increase, but that in the longer term (6 months plus) it dropped back down and evened out.

    I'm not actually even that concerned about the figures any more, as I know how much better I'm feeling and that's the main thing to me.

    But it would be nice to be able to have test results to back up the fact that LC eating is not harmful, not for my own benefit but for all those that look horrified when it comes up :(

    For the first time had stilton soup today, ooh it was so good. I finished it off in double quick time and already can't wait until I'm next due to have it.

    Definitely be having this one again!

    No pancakes for me, I've never particularly liked them so am not fussed, but happy pancake day to those that do :)

    The only thing that I can see has changed is he now eats lower carb sausages ( we changed from the other ones) everything else is the same ... It's a puzzle

    I spose everyone's taste is diff but I just really didn't like the pancakes, felt sick after them tbh so won't be having them again

    It could be the nitrates, some people are very sensitive to them. Suggest he eats eggs instead? :D

    So this 7lbs 'weight' may be water, and the body is still going through a balancing phase. Do you know approx how many carbs he/you is having?

    Sheila, I'm sure it's been mentioned before, but frying in olive oil isn't the best thing. It is fine for warming and dressings etc, but it can become a trans fat at high heat. The only stable fats at high heat are natural animal fats - like good old butter - and coconut oil (but I think you know that :p).

    If you are stalling - even if you don't eat much of it - your low-sugar jelly will have sweeteners in it. Might be something small, but I would avoid sweeteners like the plague.

    No I didn't know about the olive oil so thanks :) I haven't used coconut oil for 6 months since my GP banned it as being high fat. I tried to explain but she was adamant and, with the raised cholesterol, I listened. Waiting for result of 6 month retest for that and thyroid, done yesterday, and will then decide as I know that it is good for you.

    I take my hat off to those who are sticking very low carb as I am finding it hard going back to 20 - 30 instead of 50. I have an overwhelming craving for chocolate cake, especially since making one for my daughters birthday last week.. It was low carb but I think too high at the moment. I do think that tiredness may have something to do with it though.

    It seems that I am moaning so sorry everyone :o

    LOL Sheila, you know that so far you have been educating her, bout time you had a bit more confidence to state your case.

    Can I suggest googling Mary Enig and Sally Fallon for the low down on fats.

    Also worth knowing that the 1940's research that led to the 'saturated fats cause cancer' was based on partially hydrogenated fats rather than natural ones. And that heart disease went on a rampant increase in the states as butter consumption plummeted. Butter also contains lecithin which helps the body use cholesterol properly and is a good source of iodine... and there's more... so do yourself a favour and make your pancakes taste nicer LOL
