Hard boiled eggs into mayonnaise with salmon / chopped olives / cream cheese / herbs / black pepper / chillis / anything you like in any order and combi.
Then wrap in ham as a roll, or use lettuce as the roll.
I make a stiff omlette - put 5 or 6 eggs into mixing jug. Add chopped - cheese / veg / tuna / chopped up meat / olives / anything you like in any combi - until it's v stiff to stir.
Then cook in butter in 24cm frying pan (not too hot, it's thick, takes time). Do on top of stove then when nearly set add finely sliced baby toms to top. Pop under grill.
When starting to brown and cooked pretty solid cut into 'pizza slices' with spatula. Put back under grill until brown to preference.
I usually have some hot for eve meal and allow some to cool under the off grill until cold - this makes sure it is properly set. Vgood with coleslaw / salad / whatever - it's nice. :rotfl:
If you like quiche cold, you may like this. And you get to use what you like.
Pigs in blankets, coleslaw and salad. Or similar
Hard boiled eggs and a bag of pork scratchings or crunchy streaky bacon cooked night before
Put hot bovril in a small flask to have alongside if you need wet but not soup.
There's a few things on the recipe list. We've had this question quite often as it is the most difficult meal of the day if you are at work.

I know it's tricky but if you get a few things extra that you like you shouldn't need to get bored too much

Thanks Sheila, yes love avocado, been having that a fair bit in my salads. That's actually one thing I'm not fed up of
Funny you should mention crudites and dips, that was one idea I was going to try next week. Either crudites or possibly lightly grilled courgette and pepper perhaps? That would be a quick and easy option which I should also enjoy I think.0 -

Thanks Mercy. I'm veggie some can't do some of those but gives some ideas.
Funny you should mention the possibility of cold omelette, I was discussing that with someone at work just the other day. I said it didn't sound appetising but they said it was good. Still not convinced myself but I guess i don't know until I try - I will be brave and try that one day next week. I might love it!
Yes I think you're right, I don't need lots and lots of different things, but just a bit more variation. Evening meals are easy as there are endless different options, I just need to find the right mix of things for quick easy lunches.0 -

Cross posted there but although the salmon may not suit, the quiche can have anything in it you like
Mexican fudge is good. I use chillis but slices of baby toms, spring onion, olives or anything tasty can be used instead.

I'm hungry too actually which doesn't happen often nowadays, waiting for husband to come back to have tea. Talking about food in the meantime prob not the best idea lol.0 -

Anyhoo, today I am making a variation on potato hash. (taterash to the northern folk like me)
I am using
Turnips, green beans, carrots (few - for colour) chillis (optional) leeks and onion.
veg stock cube, black pepper corns
Black pepper ground, turmeric, little sea salt
and when Turnips are almost cooked - chunks of corned beef.
Stir in well and simmer for just 15 mins.
Should be lovely and low carb.
Will be eating this for 3/5 lunches next week so it'd better be good
