    I love swede mashed with butter, salt and pepper and it adds a hint of sweetness to the meal.

    Feeling a little better today thankfully. Hoping that a good night's sleep tonight and I'll be well enough for work tomorrow.

    Think I'll definitely do mashed swede, my mouth was watering reading your post! My parents used to do mashed swede fairly regularly years ago and used to really like it back then, and yet it's something I only ever buy once in a blue moon.

    Will be a real treat for Christmas day.

    Also am thinking of doing roasted brussel sprouts as it sounds like they'd be tasty and a nice change from boiled:

    Just tried the Thai Curry out of Rose Elliot's cookbook for the first time - delicious!!

    I've made some more to have one night in the week and I can't wait, it was so tasty, and super easy to make.

    Only veg in it are spring onions so I thought I would probably want to add more different veg next time, but to be honest it didn't need it as it was so full of flavour.

    Will definitely be making that one again.

    I have found cutting out carbs a great way to keep weight off. I still eat sugar and sweets when I want them, I just don't have bread, rice , pasta or potatoes. I have found that I don't miss them anymore either, to begin with I did but with time I didn't. Now it just seems so normal not to have starchy carbs with meals. Hope everyone manages to keep up the good work over xmas! And maybe let yourself off for xmas day :P

    Hi been thinking of trying this in new year, can you tell me what sort of things you have for breakfast & lunch on a typical day? I can see cutting it out of my main meals but struggle for ideas with these two especially if in a rush. Thanks.

    Oh gosh I just eat cauliflower rice with chicken for my dinner and I didn't like it as I hate cauliflower but I will learn to like it as I don't want to eat rice any more.

    Mamjak - for breakfast you could make a fritata and then just cut off a slice for breakfast if you are in a hurry.

    lunch - I always have cooked chicken / meat / cheese handy and then you can make roll ups with a lettuce leaf or salad. I also tend to have a half an avocado a day. Otherwise make a batch of soup and portion it and then , if you have a microwave, heat it up

    yvonne13 - did you add butter / cream and season it. That is what I do and then it tastes quite good. I also don't rice but mash it.

    So food for me today:

    Breakfast: greek yoghurt with flaked almonds and flaxseeds
    Lunch: Cauliflower, coconut and cardamom soup
    Dinner: Grilled courgette with grilled halloumi, and a side salad

    :wave: I'm here a bit LOL

    In a nutshell: The coeliac test was negative but GP accepts that there is a problem somewhere around the wheat/gluten area. The tribunal hearing is postponed until January :mad: so still trying to keep on top of that. Surgery went well but still have the infection and am now on my 7th course of antibiotics :eek: And the meds I'm on promote weight gain :mad: and it's dark and damp and I'm fed up :rotfl:

    And I've started taking (huge quantities of) Vit D as I'm fed up with this carp weather and can't get the levels up on the recommended dosage! Managed to read an interesting book on something the author calls human hibernation syndrome, not sure I'm totally convinced on all of it but a lot makes sense.

    On the plus side, my weird neighbours have adjusted the security light they had to put up to stop people falling over their dangerously positioned plantpots :T They thought I was being fussy asking them to stop it shining directly into my bedroom, so they went upstairs to have a whinge and were more than a little embarrassed when they got told she felt exactly the same about it going on and off all night long outside her bedroom and would have been over to speak to them earlier if her lad hadn't been ill! We did have a laugh :rotfl: :rotfl: :rotfl:

    yvonne13 - here's an idea for cauliflower rice that got past DS1's weird food defences: Coconut Cauliflower "Rice" (I leave out some of the raisins and cashews and don't use the sugar.)
