    Sheila, you forgot coleslaw!!! All I ate when I first started LCing was coleslaw with everything!!!

    The food above would make a yummy buffet.

    :wave: Hello all, funnily enough I've just roasted some pumpkin seeds for the first time.

    I'd roasted a pumpkin - before turning it into soup - so I used the same foil it was on and just added some salt. After a while (can't say how long!) I added some cumin and some onion granules and put them back in for 10 mins. They were golden looking by then, then I added a drizzle of olive oil, shook them all up and left them to cool. Very moreish!

    Just to add to Sheila's list I would add
    stuffed mushroom (blue cheese stuffed, flax coating, then baked), scotch eggs,
    stuffed eggs (hardboiled, split, and the yolks mixed with whatever u like, and then piped or spooned back in.
    Mushroom pate, with LC crackers.

    Not a lot to report, still working hard in the garden, getting to know the area, and getting on with LC and IF. Best wishes to everyone.

    hiya

    well, i roasted the pumpkin seeds with salt on. not sure if i like them, but i dont dislike them. i think i should have added extra seasoning. will definatly try them again as they are handy just to grab a handfull instead of going for the kids sweets!!! :D

    Murphy - i think i will try what you did, sounds really nice. thanks.

    i also love coleslaw. whats your reciepes? i end up buying the lowest one i can find as my own doesnt taste as nice.

    marrbett - coleslaw is something that I often forget about and yet enjoy. Silly really

    murphydog - glad that you are settling in. I hope to do some gardening today as I have grown a lot of plants in pots and they really need to go out. Trying to keep up with the exercise and I am walking but this weather is playing havoc with my joints .....moan,moan ;) I also have bad sciatica, which is annoying :(

    pink princess - I hope that the buffet goes well. Guacamole is also nice and there is a recipe by andrewsmum on 1st page

    nuttybabe - when pumpkin seeds are bought with other mixed seeds they really are quite nice but I am not so keen on them on their own

    coleslaw recipe -
    4 tbsp mayonnaise
    ½ tsp Dijon mustard
    1 tablespoons cyder / white vinegar
    2 tablespoons lemon juice
    Salt & pepper
    1⁄2 white cabbage - shredded
    1 carrot - shredded
    1⁄2 onion - sliced thinly
    celery

    Sometimes a bit of cream / sour cream can be added

    How is everyone today? I have not been too good recently but plan to start really trying again on Monday in an effort to try to lose another stone by Christmas. I have put on half a stone in the past 4 months and that is not good. Please fell free to give me a kick up the ...... as I need it ;)

    Went to in-laws last night for traditional fireworks,and food. I was so good foodwise, avoided all the hotdogs, french bread for the soup and the birthday cake!!!!
    I enjoyed dipping sausages and chicken legs in my yummy pumpkin soup(well, ok, I guess pumpkin wouldn't be that LC, but I eat all veg now I'm at my target weight), followed by lumps of cheese. Delicious.

    Today is
    B-eggs, mushrooms and haloumi
    L-Salad, coleslaw(HM)and brie,pine nuts
    D- mmmm(no idea)

    I don't think ground almonds worked well, if I remember. Did someone try grated parmesan?

    I make mine with GG crackers blended up with a touch of onion salt.

    I use that as breadcrumbs for most things except chicken. I prefer parmesan coating on chicken.

    Breakfast was a slice of cheese on a GG cracker with a boiled egg.
    Lunch was sausage and onion with mushrooms.
    Dinner will be flax seed pizza base topped with mozzerella and pepperoni.

    The buffet plans are coming along well.
    So far:
    Cheese savoury, egg mayo and chicken mayo pots to go with GG crackers.
    Bacon crustless quiche.
    Pork and chorizio mini meat balls.
    Ham and cream cheese rolls.
    Garlic and chive dip, guacomole and blue cheese dips served with cheese crisps and cucumber and celery sticks.
    Stuffed mushrooms.
    Cocktail sausages, plain and in a soya sauce marinade.
    Hot dog, cheese and pickle sticks.
    Chicken wings, plain, spicy and garlic coated.
    Coleslaw salad leaves rolls.
    Scotch eggs and chilli devilled eggs.
    King prawn ring with rosemarie sauce.
    Cinnamon roasted brazil nuts.

    I need to start thinking about the sweet stuff and check out all the lovely recipes you have, I will just have to eat my trial runs :D
