Tried Celeriac 'chips' tonight and ........ they're gorgeous! Definately a favourite up there with roasted green beans. So nice to have something different on the menu. I can see them becoming a real comfort food. I just melted some lard in a roasting dish, placed the 'chips' in it, then sprinkled with salt and cajun spices but to be honest I think I would enjoy them even without the spices. Hmmm - think I might try some celeriac mash with my roast tomorrow.Weight loss 0/2st

I agree about celeriac chips, I roast them with onion granules and black pepper, add salt when dished up, I have found that it is best to par boil them, then add the oil and seasoning once the water is drained, give em a good shake and spread them out on a baking tray, they can be frozen in portions once you have added the seasoning and oil, then just bake from frozen when you need them, I do a couple of rootballs each time, makes loads!0

Breakfast today was ground flax with berries and cream
Lunch was home made chicken soup
Dinner was chicken breast, shredded, added a touch of onion, jalopenos, mushroom and topped with cheese. Poured a little stock over with a few tbsp of passata. This was so nice that I would eat it again tomorrow
I hope everyone is doing well, we are almost a year in now :j

really enjoyed my breakfast poached egg on mazzers lc bread recipe ( found a slice in the freezer) and 2 slices of crispy bacon
doing a roast chicken later for when DD2 gets back from work with all the trimmings ill try to avoid the trimmings lol

Snap! Skyped DD2 yesterday hadn't heard from her for two weeks so thought I'd give her a nudge. She say's quite a few have been homesick, had parents visiting or had visits home. But DD2 says she's not homesick yet. She has earned a reputation for being the 'healthy one' in her halls because she made herself a stir fry:rotfl: Skype is great, its lovely being able to see the person your speaking to, although having said that we can't seem to get our webcam to work on Skype so we can see DD2 but she can't see us.Weight loss 0/2st

sistercas, durham_mim - glad that your daughters are settling in and that you can speak to them. Skype is great as you can see them and it makes it more personal
I have been better at sticking low carb today as I had such bad stomach pains yesterday. Still not brilliant but better.
breakfast - porridge
snack - 2 squares 70% chocolate and handful nuts
lunch - cheese, cucumber and 2 ryvita ( 6 net carbs each)
dinner - roast chicken, cauliflower, broccoli, swede. I will leave the roast pots, yorkshire pudding and stuffing.

I have just stumbled across this thread!
I have been considering low carb for a while now as really struggling to get focused and lose weight. In the past I have done South Beach and Dukan both having good success but I've not been able to keep it up for any length of time. I think the main things that worry me are getting bored, struggling with carb cravings and also i found it really hard putting together packed lunches for me and the hubbie.
I would really love to give this a go. How are you all finding it and do you have any suggestions for the above questions?

Hi Claire, I have been eating this way for about 6 months but don't follow any particular diet.
I think lunch out is one of the hardest for me and I usually have salad with protein or leftovers from dinner. There are also some very good low carb bread recipes out there which I have used. Once when I couldn't find anything to eat I bought nuts olives and a bag of salad in a supermarket.
I can honestly say that I have gone from craving carbs all the time to not wanting them at all. Every time I think that I am getting bored I go looking for new recipes, there are few recipes which can't be adapted. Just recently I have had low carb versions of pizza, nut roast, shepherds pie and paella.
To make it work for me I eat 90% chocolate and drink wine when I want and I don't worry too much if I do eat icecream one day I just carry on. With all that I have lost about 1 1/2 stone in 6 months and have not felt hungry. bw.0 -
Did anyone see Nigella on saturday. she made a fantastic pasta sauce. However forget the pasta and have it with fish (as I have just tried) or even chicken.
It went something like this pile of olives and tin of anchovies with some pine nuts and blitzed. Then she added parsley. Forget that basil is great and blitz again with plenty of olive oil. Oh and pepper to taste. No salt needed.
i also grated some parmesan over it.
ETA sorry forgot the few garlic cloves chucked in a blitzed as well.Who I am is not important. What I do is.0
