    I've discovered that as I've nearly reached my weightloss target, that I've been less disciplined about not eating carbs,and each day it seems to slip more. Therefore I've come to the conclusion that I need to maintain the LC way of eating all the time and not think that I could have a slice of bread, or chocolate(apart form the 85%)etc. I may still eat potatoes sometimes, but I think that may be ok. Otherwise, I'm still gonna avoid the grains/rice and sugars. I may allow more variety of fruit too.
    Hope everyone keeps moving forward, even if only tiny steps.xx

    Marbett, I could have written this post myself! I've just been thinking about how I'm going to eat now I'm just about at my target weight.
    I don't dare start on the carbs again and end up back at square one, so I've been thinking about a bit more fruit, and maybe indulge myself once in a while with a sweet potato, winter squash and maybe a parsnip (little devil that I am). :rotfl:

    Some fantastic weight losses here - well done all :T

    Doesn't all this reminiscing take you back :)

    Skymist - sounds an interesting life. I am 62 in October but living with my family means that I am on call to childsit, look after the house, work on the computer etc. Luckily most of my friends are still alive and kicking. How did we ever manage without the internet:D

    I've felt really off colour the last few days so haven't signed in but have been trying to read.

    Hopefully back to LCing soon...

    My childhood TV memory is 'The Banana Splits' (typical, food related :o:o).

    Will be back to posting regularly when I'm feeling better :wave:
  • Evening. Thanks for the laughs.. just been reading the threads. Dare I say it.............. I have not had a ciggy for 24 hours! Its been hell. Getting lots of cravings. Drinking loads of water.

    I had three bowls of cornflakes. Couldn't help myself. The morning started so well. I had three boiled eggs.

    Will start LCing again tomorrow.

    Hi everyone,

    I was looking for something different to do with my veg today and came across something on the Diiabetes uk forum. I tweaked it and this is what I came up with........

    Baked Swede (Hasselback)

    Small swede
    slices onion
    butter
    salt
    pepper
    _______________________________________________________________________________

    Preheat the oven to 220 degrees.

    Peel swede and cut in half
    Make deep cuts into the swede, as if you are going to slice it thinly,, but dont cut right through (Hasselback)
    Slice onions and tuck between the layers of the swede.
    Sprinkle salt and pepper over swede and finally dot with butter

    Wrap the swede halves in aluminium foil, place in the oven for 15 - 20 minutes, until softened, open up the foil and bake for a further 10-15 minutes until the swede halves are golden and slightly crisp on top.

    You can out some garlic with the onon if you wish


    Had these with dinner, It wasn't a big swede but half each was plenty for myself and hubby as I served with stir fried cabbage and bacon.


    Another recipe I found which I made was........

    Cheese scones

    1/2 cup ground almonds
    egg (1)
    baking powder(level teaspoon)
    grated cheese

    mix together and blob onto baking trays about size of squashed golf ball and top with more cheese.

    --in oven at 180 deg for about 12 mins

    My mix made 6 'scones'

    I haven't tried them yet but they look yummy

    Going to have one with butter later to try

    I know these may be too high carb for some but thought someoe may like to try them

    mant to say the Lacto free products are on offer at Mr T. I know the cartons of milk are 3 for £3 (rather than £1.29 each)

    Cant remember the other prices
