Hi guys! Still got room for a fat one?
I'm back (again), but I'm back seriously this time.
I've not been well and tbh I thought my number was up a couple of weeks ago. Doc doesn't seem to be able to tell what's up, all blood tests (loads of them!) have come back ok.
I still have things happening and they are increasing in frequency/ strength and I have to admit to being sufficiently scared enough to change my ways once and for all. I have no idea if my weight/blood sugar problems are at the root of my health worries or if they are unrelated but I figure it can only help things to shed some lard.
So, I've been low carbing for a week now and have lost my first 7lbs. I don't feel great this time round, really shaky and just generally 'off' but I don't know if that's because my blood sugars haven't settled down yet or if it's because of whatever else is going on. I daresay time will tell.
I'm not being as extreme this time, I think I wont be doing myself any favours trying to stick to 20gms of carb like I did last time. The urge to eat other things was just too great then.
In fact I'm not actually counting the carbs at all just now, I have no idea how many I eat in a day, I just know it's low 'enough' so that I don't feel as if I need to eat other things and I'm losing weight. I may have to tweak that thought in the coming days/weeks but for now it seems to be working.
I've forgotten loads of things that we all used to eat so I'll need to refresh my memory but I'm having trouble concentrating properly at the minute so forgive me if I ask loads of repetitive questions.

Sorry to hear you've been unwell, hope things settle down soon. I think you're right not to go extreme, if you can lose 7lb in the first week, your carbs must be low enough.

Hope you feel better soon aliasojo. Like you're intending on doing ..........eating lower carb I do that too, and personally I know it makes me feel much better than I used to do.

Mercy - are you still following Dukan? How is everything going as you seem very positive? I don't think that you should refreeze items after defrosting unless they are cooked.

I'm still DukanningI'm positive as I really get on with low carbing and this version seems to work for me.
I wasn't clear earlier, the mince is new today (whoops!:rotfl:) so hasn't been frozen before. The slow cook beef and turkey thigh meat are still defrosting in the sink
Will be portioning off some of the beef casserole (no veg but a little onion) so it's there when I need it. With or without veg on the day :rotfl: Did that with a liver casserole t'other week so there's 1 meal a week sorted too.
A week plan will work well I think. The foods I cook today will be used for 2 or 3 meals each over the next 3 days (and some in freezer), then the burger and the liver should take care of the rest of the week.
On the days where I don't eat veg I use cottage cheese alongside dry meats / creamy meat stir fry in a wrap or use casserole as a meaty soup, otherwise it's salads, tomatoes and green beansLots of eggs are consumed, also :rotfl:
Weekly breakfasts are usually a protein shake using some combination of raw egg, whey protein, lactofree milk, cottage cheese, yogurt, fromage frais, vanilla and cocoa etc. Not all at once
Weekend breakfasts are usually egg based. Today I had spinach, spring onion, red pepper, mussels and cream cheese scrambled eggs. Yum!
It's good.

Not really as part of the deal is to eat oatbran everyday. I use this to make wraps, bread substitute, sponge puddingor put it into a shake. Some stir it into yogurt or make a porridge. (bleh)
You are limited in how much you can have, currently I'm allowed 2tbls of it a day, but it must be eaten everyday. (for complicated diet reasons) The upside is fibre isn't an issue.
Dukan sponge pud
2tbls oatbran
1 egg
splenda or similar
2tbls fromage frais (cream cheese or plain yogurt all low fat)
salt
1/2 teasp baking powder
vanilla/ginger/cinnamon/almond essence whatever you like
approx 3 mins full power 750 watt microwave
nice with fromage frais over the top.
I know it's not trad LC but if I need to eat oatbran it's not a bad way to take it.
Can be LC'd by using almond flour and full fat ingredients. No oil necessary as it doesn't stick, and pour double cream all over it

I've just had mince and 'tatties'.
I've realised that one of my biggest problems is reconciling my need to eat healthily with my desire to eat crap.
So, if I can make my healthy food look like crap, then I'm winning. (I realise that points to me having psychological issues:o:rotfl:)
Last night I had a plate of 'chips'. They looked a nice golden brown chip colour, and cos I ate them by themselves on the couch watching tv instead of at the table as part of a meal, I felt I was having junk food. I was very happy. :rotfl: I was even happier to know that they were made from turnip and so were a lower carb option.
Today's mince and tatties was the usual minced (steak) beef, browned in a pan with a few leek 'circles', with a tiny crumb of oxo and a small splash of Worcester sauce, served with the old favourite grated cauli and a bit of broccoli. I threw a little grated cheese over the top and mashed it all up together like I did when I was a kid. My Mother would be so embarrassed. :rotfl:
I'm going to have to get past my junk food desires at some point, I realise that, but for now it's helping me get started.
I might have a go at Mercy's pud.
All other pud recipes warmly welcomed. Has anyone ever found a jam sponge substitute? Or is that just wishful thinking?Herman - MP for all!0 -

Trawl the recipe list on page 1, lots of interesting puds / cakes on there. Also there's a recipe for mascarpone mixed with splenda and cocoa. :j Very rich.
I don't suppose even no added sugar jam is low carb but if you make the pud mix using vanilla and maybe a little almond essence then put a little of the mix into pint mug, add 1 small spoon of jam then put rest of mix on top. When you cook it and empty it out onto a dish you shouldn't lose all the jam to the bottom of the mug.
Not tried it but it should work in theory :beer:
