De lurking to post something I tried
I think I saw the recipe on a diabetes forum, I dont think it was here so thought I would share as its yummy.
I put 2 desert spoons of ground flax seed in a small pot
I added a sprinkling of chopped nuts
Top with frozen raspberries
then top the fruit with l/c yogurt, I used soya yogurt becaus I prefer the taste.
The original poster posted this to make the night before for next mornings breakfast but I have been having it as a desert in the evenings. Its just like eating a fresh fruit cheesecake as the flax soaks up any juice from the thawing fruit and the berries stay nice and plump rather than going soggy.

Well, it was my turn to fall off the wagon today. I went to the large shopping centre with DD"2 and we were there over lunch time. I succumbed to buying a H& B mix of chocolate covered nuts, raisins & ginger
I have been in pain for 3 days and was feeling sorry for myself. Had a dentist appointment this afternoon and had a tooth removed. For the following few days I can only eat soft food. May have to resort to flax porridge. I don't feel like cooking soup. Tonight I copied Sheila and had mashed berries in cream followed by a glass of lactofree milk. I'll return to doing the induction weeks once my tooth has healed.

Thanks, Jerry & Mercy for onion powder/granules info - I think onion powder is ground down dried onion so a lot finer than granules, but I've decided that if I can't find the powder in the shops I'll use granules.
durham, hope the tooth (or gap!!) isn't too sore this morning. Have you tried mashed cauliflower?? It's easy to make & eat & a nice comfort food - you could put a creamy cheese sauce over it as well.
Going for a walk this morning as it's gorgeous & sunny here - need to get some LC provisions for the weekend so will stop off at the Co-op. Aldi hasn't had leeks for the last couple of weeks so I'll have to buy some expensive ones again - can't be doing without leeks!! :eek:
B - leftover quiche from yesterday - yum
L - 2 buttered GG crispbreads with topping, chopped vine tomatoes
D - smoked haddock, cauli mash, green beans, cheesy leeks
Strawberries & double cream mid-afternoon, almonds this evening. I might open a bottle of wine tonight seeing as it's Friday & the start of the school holibobs, if I do I'll probably have a couple more GG crispbreads with cheese

*Sigh* I know how you feel Durham, I had a digusting carb fest after 4 day compliance to my current calorie controlled diet :-(.
I did an hours exercise class on weds and (same as the week before) arrived home ravenous and just stuffed for the following 24 hours. I really can't go on like this I HATE IT!!!
I have had a good read through the very useful recipes link at the start of this thread. I aim to get my carbs down below 100g for the weekend then take it lower.
Breakfasts will be a problem, I know you'll tell me cooking an egg only takes minutes, but combine that with dog walkies, preparing two packed lunches, throwing the hoover round etc. before work and I am not sure I can face yet more washing up from the pan :-)

This is known in our family as nam pla, simply because mum had never used fish sauce before so thought that was what the dish was called LOL. This is a brilliant store cupboard recipe, you can literally do it all out of tins/bottles and it works well with veg or meat (or both). It's very much a 'by eye' again but the basic quantities are as follows. (I often cook this when there's too much month at the end of my money.)
coconut oil for frying
1 large onion (or half a tin of eazy onions)
1 tin tomatos
1 tin coconut milk
meat of choice - works well with chicken and white fish, the frozen square blocks are really practical
veg of choice - I have been known to throw in a bag of frozen mixed veg or assorted tins but sliced up pak choi added in the last couple of minutes gives a good crunch.
Ground:
cumin
ginger
coriander
chilli
Fresh (or dried):
basil
coriander
tbsp or two of nam pla (fish sauce)
Thank you for this recipe! Its currently on the stove now, bubbling away, almost finished and it smells divine! Oh, I can NOT wait to tuck in.
Hope you don't mind, but I've tweaked the recipe as I needed to use up some stuff. I totally left out the tomatoes. I used fresh coriander and instead of onions, I used celery. I ground everything up in my blender. I also added some lime juice and grated the lime rind into the mixture while it was cooking. I used olive oil as well to fry the celery mixture. Will let you know how it tasted later. -> off to grab a large bowl and spoon!0 -
Lovely day today. Lots of sunny spells. I say that, as its intersperced with cloud. Every time I go out the sun goes in again. But its NOT raining ! Yae!
Just eaten the Thai Nam Pla thingy. Oh, it was simply delish! I'm going to be making that more often. There is plenty left so we might have it tonight. DH can have rice with his.
I've had a right munch on today. So far its gone like this:
B: Olives, Ham slices, and chedder cheese slices.
L: Nice large bowl of Thai Green Curry (known as Nam Plah in Daska's family).Might either be fish with batter taken off. OR some leftover curry.

well my cold is finally leaving me ... still have it in my nose area but i can live with that
with having the cold my eating wasnt so great tbh... i just couldnt eat so was having on average 1 meal a day and forcing that down,
i did stop with the linctus but not till i had had half of the bottle at work ( needed to try not to cough so that i didnt disturb the people i work with)
i did have the orange tablets as well but they were also full of sugar ( husband bought them and didnt think to check the label)
so although i didnt eat much i think with the sugar that i had ( medicine wise) then i possibly didnt do myself any favours
however i am back on track, have been reading the living low carb life book that was recommended and i can honestly say i really enjoyed it, i have decided to go down the power protein type of diet ( i hadnt stuck to any diet till now i just cut down) so i have ordered the book second hand and will get started when i come back from my holidays
hope everyone is doing really well ... can i ask if we can have another thread or some way in which we can add the great new recipes to this one so that we can all have some more delicious food ... the domoda and nampam ( yep we have that fish sauce and thought the same thing lol) would be fantastic to have and even better to not have to trawl through the thread to get it
