    Whoever mentioned Langley farm cottage cheese :T ooh it's nice! Just used some of it as a dip with onion, garlic, watercress, bit of milk to bring it down a bit, it's in the fridge infusing. Hoping it will be good with a wedge of belly pork later.

    Thought I'd try something different last night and had a baked aubergine stuffed with the flesh, onion, garlic, ham, grated cheese, chilli, a couple of spoons of flax seed, all mixed and piled back in, then more grated cheese over the top. It was really nice, but full of fibre, and with the flax it certainly got things moving....if you know what I mean!! Didn't realise how carby they were, full of vits and mins though.

    my online meat order came this lunchtime , just i was putting my other shopping away so that was convenient lol, anyway the meat looks fab :T it is well packaged too , its vacumn packed which makes it easier to fit in the freezer.:j
    currently got a lasagne ( pasta sheets for them and courgette strips for me ) , spag bol sauce, chilli and mazzers butter chicken recipe on the go :D which will do afew meals

    Hi all!

    Been feeling tired and not v bothered for 3 day week meals :D

    Not bad on the whole though :rotfl:

    Breakfasts have been / will be coconut oil shake with turmeric and black pepper

    Lunch
    yday - lumps of lamb and what was originally lots of spinach, wilted :rotfl:
    Today - mackerel in olive oil over lots of salad leaves, rocket, spinach
    tomora - sardines, salad, flax bread, mayo

    Eve
    yday - stawberries and cream
    today - cheese toasty (flaxbread) topped with 1 egg omlette, mayo
    tomora - Probably another cheese toasty :rotfl: it was lurvly :j

    I modified the flaxbread.

    Used bigger recipe but added 2 tbls sesame seeds before grinding and 2 tbls water in mix.

    You know that type of full feeling you remember from eating carbs? Got that right now :)

    I've just had steak and chips (celeriac) with crispy fried onion rings - Large sliced onion,dipped in beaten egg and grated parmesan, shallow fried in EV olive oil. Lush. I could have eaten just a plateful of the onion rings!

    murphydog999 I found the cottage cheese in ASDA then andrewsmum's OH found it even cheaper in a farm shop so we both mentioned it

    sistercas courgette lasagne sounds good.. OH just did me veal bolognaise with sliced runner beans instead of spaghetti

    OH looked aghast at the £11 Hersheys cocoa when he came home tonight tho he'd spent £13.20 on 250ml hazelnut oil but he was surprisingly OK about the seven 500g tins of ghee arriving tomorrow. (next day delivery for 95p as over £35 order). Ghee doesn't go off so it can sit in cupboard.

    got a bit of a thing for blueberries at the moment, and strawberries. Nice to sit down and have a bowl in the evening :)

    going out for lunch tomorrow, hope i can make wise choices!! i've been 5 weeks without diet coke so i'm going to allow myself one tomorrow as a treat ;)

    Oh gosh it's been some week!

    Curtains are made (but still need to be hung), fab roller blind is up (big grins from DS2), ship's wheel chandelier is hung, presents are opened, cakes are made... and I have no choice but to stop LOL

    Have had fun with food this week, tried using courgette instead of pasta sheets for lasagna. I recommend not bothering to try it with coconut flour, it burnt far to easily. In the end I just coated them in egg and fried them off, really just to stop them falling apart quite so easily. It went down very well with DS1. I used to thicken the mince with oats/lentils but obviously they're a bit on the carby side so this time I used peanut butter which worked well.

    Lots of veggie/cheese frittatas this week :D

    and jelly and cake and badness... :(

    daska - it sounds fab :T Jelly :eek: hope it was sugar free ;)

    B - Two free range eggs, pile of mushrooms and left over smoked salmon scrambled in lard because I broke a yolk, so not proper scrambled eggs.

    This weekend the larder cupboard is getting cleared out to check dates and throw away stuff we don't use. I found a packet of Mr Porky's pork scratchings in it and ate them despite the additives :( I'm on the hunt for additive free pork scratchings now. If anyone knows of any that I can buy online please post :) xx

    Apologies to William Shakepeare ..Wondering whether I am the only non-veggie on this thread to use lard ???

    The first one I tried was Morrisons Savers lard which IIRC was 29p. Doesn't taste of anything really but lard adds fat to my diet so that's good.

    Opened a new one today, Kerrymaid lard (50p, Iceland) and it's harder than the Morrisons Savers lard, but again no problems using it.

    Low carbing does mean eradicating lots of things eg pasta, rice and bread but also gives me the chance to discover new things I hadn't ever tried before like dripping, lard and ghee. :cool:

    What have you discovered ?
