hi iwant to make some fairy cakes for dd pack lunch tomorrow how do you make them what do you need and how long do they last for and where do you store them sorry for all the questions thanksi cant slow down i wont be waiting for you i cant stop now because im dancing0

I use equal quantities of self raising flour, caster sugar and margarine and 1tsp baking powder all in a bowl together. I add 1 egg for every 2oz (50g) of flour and then I set the electric mixer on it until it is all smooth and creamy. If the mixture is a bit stiff just add a bit of milk. I put a good desertspoonful of mix into each buncase (in a buntin) and cook for approx 12 mins at 180C.
variations - add some cocoa and a drop of milk to get chocolate buns
add some dessicated coconut and a drop of milk.
add chopped cherries, chopped apricots or dried fruit
add a mashed banana
I store them in an airtight plastic tub and they last for about 4 days but you can freeze them ok and defrost them as you need them.I like to live in cloud cuckoo land :hello:0 -

4 oz butter (margarine)
2 medium sized eggs.
Cream sugar and butter together (I have a Kenwood chef, so this is a doddle), add one egg and a tablespoon of flour with it, beat, then add the next egg and a tablespoon of flour, beat. Then fold in the rest of the self raising flour. Plop into cake cases.
Bake in oven - 180 Centigrade (we have electric fan oven) for 13 minutes, et voila! Cakes for school for the week. Put some icing on the top - mix some icing sugar with boiling water - only a bit of boiling water and the children like it even more.0 -
i make mine the same as undercoat.
saturday or sunday is bake day and they will last until friday.

I use the same recipes as everyone else. Just make sure you really cream the butter and sugar together (until your arm drops off!) and don't over beat the eggs (I do a quick whizz with the electric whisk). Fold the flour in slowly after this and your cakes should rise lovely.0

Me too - it's the only recipe I ever learned by heart in school cooking classes. Once you've got the basic recipe, you can play around with it:- Replace 1/2 oz flour with cocoa powder (not the instant hot choc stuff) to make chocolate ones.
- Add nuts, chocolate drops, cherries, grated coconut.
- Dip top into jam, then into sprinkles, chocolate flakes, icing sugar, coconut, Smarties.
- Stick a choc button on top of the cake while still warm so it melts just slightly; enough to stick.
- Cut top off cake, drop a bit of cream onto the cake, cut the cut-off disc in two and stick into the cream to make butterfly cakes.

Sorry to butt in - just a quick query. I plan to do a load for a big occasion next year (my wedding :heartsmil) that I want to ice but mine always rise too much in the middle.
Any suggestions on how to keep them nice and neat for icing?

When you put them in the case, make a dip in the middle with the back of the spoon - should stay flat then, as the middle always rises faster than the edges.0

hi thanks everyone i have made some i made some choclate ones with choclate iceing and greated up a bar of choclate they had left from halloween and spinkled that on the top and i made some vinilla one with white icing with grated choc on the top of them and i frezzed half so have enough for two week and dd said they are yum when i let her try onei cant slow down i wont be waiting for you i cant stop now because im dancing0
